A touch of Disney magic

Three months since Christmas and nearly all of those festive treats have disappeared from the kitchen cupboards to be replaced with Easter ones instead, but last weekend G finally got to enjoy her Christmas present, just in time for the Easter break. Having waited so long for the day to arrive, we decided to make it into a mini family celebration,  starting with a car journey to Cardiff with G and M wiling away the time singing along to the Cats soundtrack. Once we arrived, we started with a brief stroll into the City centre, looking for the perfect place to stop for an early tea.

I had done a little research before we left home as I was keen to find somewhere new to eat and was hopeful that Mexican chain restaurant, Wahaca, might be able to provide us all a dinnertime treat. Before we were led to our table, I spoke briefly to our hostess about the somewhat complex dietary requirements we have at the moment and was assured that she was confident that they could put together a safe meal for us. I took my seat, clutching their comprehensive gluten-free menu and accompanying allergens listing to study whilst we tried to choose our dishes. Wahaca is a new dining experience for us all and we were hard pressed to know where to begin with our choices, especially as we had no real idea about portion size.

Mike and I opted for their Mexican Feast to share, which is made up of a number of smaller portions from the menu, including tacos, quesadillas, tostadas and empanadas, and was more than enough to fill us before we reached our final destination for the day. I was impressed with their gluten-free menu, which explains that there are a mix of dishes available, some that are completely gluten-free, whilst others are suitable for those with a gluten intolerance. G pondered the menu for a long time and struggled to reach a decision, not least because so many of the dishes include dairy as well as a spiciness that she would prefer to avoid. In the end, she actually ordered from the Kids menu, where she could have grilled chicken in soft corn tortillas. There were a few too many vegetables adorning her plate for her liking, but she did eat the rest in fairly quick fashion.

Our new approach to food challenges means that M can occasionally add an extra into his dish and I had my fingers crossed that we might be able to combine a little onion to his meal to add some flavour, but unfortunately their green rice included vegetable stock and garlic as well,
which would definitely be a step too far at the moment. After a lengthy discussion with the restaurant manager, M opted for a double portion of grilled chicken, cucumber and apple, all washed down with a Virgin Mojito, although the last didn’t quite hit the mark. Our meal was nicely finished with a dairy-free hot chocolate for G and a coffee for me. We were once again disappointed by the lack of choice when it came to dessert and instead decided to give it a miss and head on to our final destination.

Dinner done, it was off to the Cardiff Motorpoint Arena for 100 years of Magic marked by Disney On Ice with one very excited young lady and a slightly less certain younger brother. G has been desperate to go to see Disney on Ice for a long time and the evening really was fantastic as she loved every moment of it. Despite his initial reservations, M was equally spellbound, even during the lengthy part dedicated to the story of Frozen. From everybody’s favourites, Mickey and Minnie Mouse, to Tiana and Prince Naveen from modern classic, The Princess and the Frog, there was more than enough to keep everyone entertained. The skating was superb, the spectacle fantastic and the songs had many in the audience clapping and singing along. G didn’t stop smiling the whole evening and it really was a Christmas present worth waiting for without a doubt.

Ice cream: that perennial favourite of children everywhere. What image does ice cream conjure up for you? Summer sun and beach holidays? Bowls of jelly and ice cream at birthday parties? The necessary accompaniment to just about every dessert you can think of, from apple crumble to treacle tart and, if you’re British, the 99 – vanilla soft-whip ice cream in a cone and topped with a chocolate flake. Mmm, my mouth is watering just thinking of it.

For M, ice cream has been the one pudding he has missed most in the 2 years since he went elemental and it has taken a painfully long time to find and adapt a recipe to make the perfect M-friendly alternative to this popular frozen treat. I have long had an ice-cream maker as part of my essential bits of kitchen equipment as once M had gone MEWS-free, I quickly realised that the simplest way to find a dairy- and soya-free ice cream was to make my own. img_13421M and I are also big fans of sorbet and we have enjoyed some deliciously indulgent home-made lemon, orange or raspberry sorbet over the years. I even attempted a wine sorbet, thanks to the recipe book that came with my machine, but it was a disappointing disaster that really couldn’t be saved.

Over the last couple of years, I have tried an apple sorbet for him, but M was less than impressed and I struggled to get the consistency right as the sorbet failed to “set”. Since the summer, I have been determined to find a way to successfully make a safe vanilla ice cream and finally found a simple, vegan recipe with just a handful of ingredients that I knew I could easily replace. The discovery of a palatable rice cream last year was the key to my success and I shut myself into the kitchen in the lead up to Christmas in order to perfect my recipe in time for the festive period.

I struck gold in that very first attempt and I was delighted with just how close to the “real” thing this version came. M and G were absolutely thrilled with that first bowl of vanilla ice cream and it’s been a good alternative for Mike too, who is unable to eat a bowlful of dairy ice cream without suffering the consequences. I love being able to whip up this easy dessert in less than an hour and know that it will continue to be a favourite for a long time to come!16830691_10154166034751123_1184328170820370385_n

*Interesting piece of trivia – the song “I scream, You scream, We all scream for ice cream” was a popular song first recorded in 1927 as a novelty song, before becoming a jazz standard and part of popular culture!

The Best Eateries in the Country

FFEOA 16 200X200Last week saw the third annual Food Matters Live event being held at ExCel, London. This event, which brings together hundreds of visitors, exhibitors, speakers and organisations from across the food and drink industry, aims to “…enable collaboration and innovation to support a sustainable food landscape for the future…” as well as encouraging cross-sector discussion and collaboration. I had first heard about it during the FreeFrom Foods Awards and was keen to attend if at all possible. Unfortunately, the necessary childcare arrangements just couldn’t be worked out to allow me to attend the 3-day event, but I did take some time to follow what was happening via some very active Twitter feeds. Tuesday afternoon was of particular interest as the winners of the FreeFrom Eating Out Awards 2016 (#FFEOA16) were being announced live at the event and fortunately coincided almost perfectly with the hour I spend sitting outside of M’s lesson at the Dyslexia centre, allowing me to focus on my Twitter feed to see the results as they happened.

Earlier this year I wrote about the launch of the 2016 FFEOA and the exciting news that Executive Chef, Dominic Teague of Indigo at One Alwych had won the first ever Pathfinder Award given to those who have “…really thought outside of the conventional freefrom box…”. Dominic not only accepted his award on the day, but then also took on the role of presenting the awards to all those worthy winners. When you look through the list of winners, goldstarsit becomes immediately obvious that there have been huge strides forward in the realm of catering for those with allergies and it was amazing to see so many fantastic food service providers from across the UK on the list.

I was delighted to see that each of the awards category was hotly contended and included well-known names such as Wetherspoons, CentreParcs and the Rainforest Café amongst its success stories*. These are places we haven’t yet dared to venture with M and his restricted diet, but will definitely consider visiting in the future when we’re in the vicinity. We were also thrilled to see some of our personal favourites winning well-deserved accolades including M’s all-time favourite, Borough 22 and our newest discovery, Café Nouveau in Frome. It was also good to spot the odd recommendation within reasonable driving distance and we’re already planning when we might be able to make some visits and try the freefrom offerings out for ourselves.

14650222_315615772146548_6413808020440687219_nThe overall winner was the Labyrinth Holistic Café, a community café found in Stockton-on-Tees. It is run as a not-for-profit community enterprise and is keen to welcome everyone, from all walks of life and no matter what their diet. The reviews given by some of the FFEOA16 judges commended the extensive menu, amazing fresh food and attention to detail that led to it being given the highest recognition.

Next year’s Food Matters Live conference is being held from November 21-23 2017 and I’ve already pencilled it into my diary as a must-do event for my year.

Cafe Nouveau, Frome

cafeThere’s nothing better than finding a hidden treasure and this small cafe is an absolute gem. We were visiting friends who moved to Frome at the start of the summer and on recommendation from another friend, decided to try out Cafe Nouveau in Tytherington for our Saturday lunch. Long gone are the days of just dropping into a cafe or restaurant and hoping for a safe meal to feed both children, so about a week before our visit I wrote a quick email to the owner, Susan Green initially asking if it would be possible for us to bring a packed lunch for M to enjoy whilst the rest of us ordered from their menu. Much to my delight, Susan replied offering to prepare a cooked lunch for him based on his 5 safe foods and then impressed me further with some extra questions about which herbs and seasonings could be added to his meal to give a bit more flavour. This was already a meal that was sounding like a success and I couldn’t wait for our visit to see exactly how well it delivered.

img_12441I’ll be honest and say that we didn’t realise at first that the entire menu is gluten- and dairy-free, but as soon as we had established that fact, G was in her absolute element. I cannot adequately put into words her reaction when she realised that she could choose anything she fancied and soon settled on a prawn mayonnaise ciabatta with a small side salad and accompanied by her perennial favourite, a soya milk hot chocolate. When we placed our order for her drink, Susan reassured us that because G needed to be dairy-free, she would use dark chocolate powder to ensure the drink was completely safe for her. They had a fantastic range of alternative milks and milk-based drinks on the menu, including almond, coconut and soya milk as well as some cows’ milk for those customers who don’t want to try something different. We were told that the cows’ milk is kept separately and different containers used depending on the milk used. img_12451M was keen for G to try the “Vanilla Soya Frothy”, which I assume is a vanilla milkshake, but G was determined to indulge and stuck resolutely to what she knows she likes.

Mike and I both decided to take a look at their specials board, which is updated I believe on a daily basis and contained some delicious sounding dishes. I checked to make sure that their soup of the day didn’t contain potatoes and chose the chicken soup with a gluten-free roll on the side. Mike opted for their daily special of a spinach-filled chimichanga, which img_12461Susan mentioned was a fairly small portion and so added the Mezze plate, which included houmous, olives and some delicious seeded crackers. The plates, when they arrived, looked wonderful and the food was absolutely delicious. My soup had that real home-made feel to it, was packed with chicken and tantalisingly fragrant in its flavours. I was impressed with the gluten-free bread, which we were later told is baked off-site in a img_12431bakery that has an exclusively gluten-free area to make sure there is no cross-contamination risk. G’s sandwich soon disappeared and her hot chocolate didn’t last long either! As for M, he was thrilled to receive a healthy-sized portion of plain rice, topped with 2 roasted chicken thighs and some apple and ginger purée. He was a little disappointed that they didn’t stock any rice milk for him to drink, but was happy with the cartons of cloudy apple juice that were on offer instead. We were all delighted by our fantastic meals, little realising that the best was yet to come.

Anticipating that there wouldn’t be much on offer for M as a dessert, I had brought some safe snacks with us for him whilst the rest of us enjoyed a pudding. For the first time ever in her life, G had the chance to experience something that is commonplace for all her friends. She and I went to the counter, where an impressive array of cakes, cookies and other sweet treats were on display and she could eat every single one of them. That is a treat that is absolutely priceless and I loved seeing her struggle to pick just one item to enjoy after her lunch. There was chocolate cake, Victoria sponge, reduced sugar apple cake, flapjacks and some amazing-looking bite-size vanilla and nut ball treats. G finally settled on a toffee popcorn cookie, whilst I savoured a slice of the Victoria sponge.  Neither stayed around long enough for me to snap a photo, so I’m afraid you’ll just have to imagine how wonderful they looked. We were so impressed with the selection that M helped me choose a few to take with us for afternoon tea at our friends’ house and was particularly keen that the man of the house had the chance to taste the allergy-friendly chocolate and orange torte.

Cafe Nouveau really was a most remarkable find and one that the whole family would happily recommend to anyone eating out with food allergies. It is part of a very small development on the edge of 30 acres of parkland that also includes 4-star Bed and Breakfast, The Lighthouse. Susan and her team open the cafe from 7am to provide breakfast for The Lighthouse’s guests as well as other customers, something that I absolutely love as it would save the need to pack boxes of cereal and cartons of safe milk on our travels.

14141873_10153684384151123_244385722473814537_nI have a confession to make. In the grand scheme of things, it’s no biggie and it certainly won’t come as any great surprise to my nearest and dearest, but I have to admit that…

my name is bluesingingdragon and I am something of a coffee shop addict.

Admittedly, I’m not yet at the stage of needing a daily fix of my favourite flavoured drink, but when the opportunity arises to partake, let’s face it, I’m not likely to say no. Days out often involve a quick game of “hunt the coffee shop for Mummy” whenever possible and travel breaks are carefully timed to match our approach to a service station housing either a Costa or Starbucks, depending on my current preference. Is it wrong to love that my kids know to order me a “decaf vanilla latte”? I don’t think so, especially when it has saved my drink on the odd occasion that Mike has forgotten one crucial element or another from my order.

img_12061My coffee shop of choice does change on a fairly regular basis, depending on the time of year and the flavoured drinks on offer. For the last couple of years, Starbucks has held the monopoly on my business from the end of September until Christmas, thanks to their Pumpkin Spice Lattes and Black Forest Hot Chocolates, which have unfailingly kept me going during M’s GOSH admissions. As for the rest of the year, well if I’m perfectly honest I’m fairly ambivalent to where my decaf comes from most of the time, but whenever G and I are having some much-needed girls time, Costa always wins hands down. Our recent trip to London for the last YPF meeting proved to be the perfect opportunity to try out a few of the free-from foods that Costa has to offer and we weren’t disappointed.

img_12511G always chooses a small soya hot chocolate* with marshmallows and loves nothing more than accompanying it with a gluten- and dairy-free cake. However, this time we were travelling late afternoon by train and I wanted to pick her up a light tea for the journey home. As well as the obligatory drink and cake, G also chose a gluten-free roll and packet of crisps to complete her meal. I was interested to find out just how much she enjoyed her sandwich and whether she’d be happy to eat it again. To be honest, G was a little uncertain about the sandwich as she’d picked a chicken salad roll and she wasn’t impressed that there was tomato in it too, img_12081but once I’d removed the offending item, she was happy to give it a go and ate the lot, telling me that it was surprisingly filling. The crisps rapidly disappeared as did the mini pecan pies that rounded off her supper beautifully.  All in all, G gave her meal 8/10, a decent score given the disappointing inclusion of tomatoes in her sandwich.

Much as I was delighted to be able to buy a complete light meal that was safe for G to enjoy, I was disappointed by the limited choice, which seemed to ignore what can be the simpler tastes of children. I know that G would have been much happier to have a plain ham roll, but the only sandwich available was the chicken salad roll and that had been challenging to find as it was hidden amongst the other sandwiches, wraps and paninis available in the fridge, something I’ve found to be true in every Costa I’ve visited in the last few months. Likewise, as fantastically delicious as the pecan pies are, they are the only safe cake available as the gluten-free chocolate brownie contains milk and their fruity flapjack contains oats. They did previously sell gluten- and dairy-free mini bakewell tarts, which were another huge hit with G, but those were discontinued and replaced by the pecan pies, something that G still grumbles about these days. I love that a mainstream, high street coffee shop is trying to cater for those with food allergies, but I think there’s still some work to be done to make this a really great elevenses or lunch-time option.

*Costa states that milk is present in the manufacturing site/factory/supply chain of their soya hot chocolate and that there is a significant risk that this allergen could cross-contaminate the food. Do not choose this if you have a severe dairy-allergy.

A Mini surprise for a Big birthday

At the beginning of October, I started my second new job since July after being made redundant just before the end of the summer term. This new position is a really exciting opportunity for me as I become Finance and Administration Manager for a local project and even though I never imagined myself being able to say this, I am now grateful for that redundancy as there is no way that I would have even considered applying for this post if I had still been working comfortably close to home. The biggest change has been the huge increase in my hours and I am fortunate that once again I have found an employer who has been understanding about our home situation with M and my current need to be able to work from home on a regular basis. Bearing all that in mind, you’ll understand why baking has dropped down to being a fairly low priority on my list and the presence of xxcakes or biscuits in our house has been practically non-existent. However, with Mike’s 40th birthday looming mid-month, I needed to find some time to attempt, yet again, a version of his all-time favourite dessert – Lemon Meringue Pie – that would not only keep him happy, but also allow G and M to enjoy it too.

Looking back at my blog posts from over the last few years, this isn’t the first time that I’ve tried to recreate this classic dessert, but every time something hasn’t quite gone according to plan, usually the egg-free, rice-based meringue for the topping. The discovery of both rice protein powder and rice vinegar on the on-line supermarket site, FreeFrom Market, suddenly made the prospect something more than a pipe-dream and the Friday before Mike’s birthday saw me desperately trying to whip up a batch of mini meringues, safe for all members of the family. I’ll be honest, the recipe still isn’t quite there and it’ll need some more tweaking to get my perfect meringue, but they tasted good albeit that they were a little stickier than I perhaps had in mind.

I had decided that trying to create one large pie really wasn’t going to be feasible when it came to either my few-ingredients short crust pastry or the meringue itself and so settled on baking mini pies that would be just enough for a rewarding mouthful. I converted a simple short crust pastry recipe to suit M’s allergy needs and, with a few adjustments along the way, managed to produce some fantastic pastry cases which, much to my surprise, baked beautifully and maintained their shape as they cooled. I had already decided to replace the lemon filling with generous spoonfuls of my M-friendly lemon curd and popped the filled tarts into the fridge to allow the curd to set before adding the final touches. As soon as the mini pies were chilled, set and ready to eat, I dropped img_12221a single mini meringue on to the top of each one before serving to my eager husband and child. I will add at this point that neither G or I partook in this particular delicacy – the sharpness of the lemon didn’t appeal to G and the sweetness of the meringue doesn’t agree with me and my T1D tastes. However, despite the fact that only 50% of the family chose to eat these birthday treats, they were extremely well-received and I am reliably informed by both the men in my life that the lemon zest in the pastry when combined with the sharp lemon and sweet meringue was a taste sensation they very much enjoyed.

Giraffe, food allergies & me

This restaurant chain has long been a favourite of ours, even before the days of M’s extreme restrictions, and was one of the very first that we ventured back to once we had successfully got 3 foods back into his diet in 2015. We’ve visited their restaurants in various locations across the UK – London, Bristol, Milton Keynes – and have unfailingly had great service and understanding about the risks surrounding food allergies. So I was disappointed recently to see a Twitter conversation where fellow allergy-sufferers had not had such a good experience and indeed where one had suffered a severe anaphylactic reaction when her request for no soy beans in her food had been ignored. tweet

Naturally, me being me, I couldn’t help but wade in with my size 8s, not just because of our previous encounters, but because of our most recent and excellent experience at the Giraffe restaurant in the Brunswick Centre. I was so impressed with the impeccable diligence taken in regards to safeguarding my children during our meal that I have been singing their praises far and wide and felt it was about time that I did the same here as well.

img_11141G, M and I had headed there for an early supper following a busy day in London. G had been at her 2nd YPF meeting at GOSH for the day, whilst M and I had walked many thousands of steps exploring the activities and displays on show to mark the 350th anniversary of the Great Fire of London. Once our day was done, we had just enough time to sit down for our dinner before heading off to catch our train home and wandered to the Brunswick Centre because of its proximity to GOSH. The Brunswick Centre hosts a number of different restaurants, most of which we have tried at one time or another over the years, but Giraffe is the one that we most commonly head back to as both children enjoy the food and it is one of the few that prepares rice for M to accompany his meal.

downloadDecisions made about what they’d like to eat, our waitress came to the table to take our order and this was when their attention to details become really apparent. I started by telling her that both children had allergies and she immediately disappeared to grab their allergen listing to run through their menu choices with me. I mentioned that M’s allergies in particular were complex and unlikely to fit the detail given in their book, but she advised me that she had to go through it because she would be asked about it as soon as the order went to the kitchen and that her neck would be on the line if she hadn’t taken that first step of checking it all out. We started with discussing what would be safe for M to eat and she was immediately able to offer brown rice, a grilled chicken breast and cucumber slices, a meal that would more than meet his needs and then we moved on to G.

G had decided she really wanted steak and chips for dinner and whilst there was no problem with preparing a safe steak, the chips were more of a problem. Our cheerful waitress said it was possible that the chips couldn’t be cooked gluten-free as it was dependent on whether the oil in the fryer had been changed since their lunch-time service or not. She immediately headed off to the kitchen to check the situation with the chef and came back to apologise that unfortunately the chips would be cross-contaminated and so we needed to pick something else. G was insistent that she didn’t want rice and I was struggling to spot an alternative as the potato wedges are also cooked in the fryer and so wouldn’t be safe. 20150408_181702However, our waitress came to the rescue and suggested that G had the crushed potatoes as, whilst the menu stated they included dairy, she could request that they be prepared with just a little oil instead. Situation saved!

It didn’t take too long for our plates of food to arrive at the table and we were delighted with the meals that were served. Despite all the hassle with getting G’s meal ordered, the steak and crushed potatoes that arrived looked delicious and she devoured the lot in fairly short order. M munched his way through his dish too and the second chicken breast that we asked for half-way through was prepared and served before he had managed to clear his plate. I really was incredibly impressed with their approach to preparing, cooking and serving allergy-friendly food and how hard they worked to ensure that we all had a meal we could enjoy and remain safe eating. I don’t know if this system is in place across the Giraffe chain, or if it is carried out as thoroughly as it was at the Brunswick Centre, but I’m certain that this is a restaurant we would happily choose to eat at again.

Something sweet for the weekend

If there was one thing we were all in need of last weekend, it was a sweet treat and I really wanted to bake something that I hadn’t made before. M was keen for me to make an entry for Delicious Alchemy’s own version of the Great British Bake-off, the Gluten-Free Magic Bake-off, so I needed something that would feed both children as well as hitting the brief he gave me of “something spectacular Mummy“. Hiding in the kitchen cupboard was a packet of Delicious Alchemy’s Gluten and Dairy-free Vanilla sponge cake mix, an item I’d bought on something of a whim to go with the 5 bags of their Rice flake porridge that would keep da_bake_off_logo_2016M going for the next few weeks. I pondered on whether I could use the mix to bake similar cupcakes to those I would be making for M and settled on the classic flavour combination of pear and ginger that has served me so well in the past. I haven’t made pear and ginger cupcakes before, but combining my recipe for pear and apple cupcakes with that for pear and ginger cookies, I was certain that I was onto a winner.

I started with a batch of M’s cupcakes and carefully tasted the batter mix to make sure that the ginger wasn’t too overpowering, something I’ve been guilty of in the past. Satisfied that the flavour combination was exactly what I wanted, it was time to move on to G’s cupcakes and I couldn’t wait to try out the sponge mix. Such mixes are a convenience I don’t use very often, usually because they don’t meet our complicated allergy needs, but given our last 2 Decembers with M disappearing into hospital and missing G’s birthdays, I figured that anything that could make the whole cake-baking experience a little easier for whoever ends up making her a cake can only be a good thing. I was really impressed with the sponge mix and how easy it was to use. I followed the packet instructions precisely, including using an egg  –salted-caramel-1 I can’t remember the last time I used an egg in my baking – and then added my own twist of pear and ginger. A quick taste reassured me that the flavour was good and then, with M’s cakes already out and cooling on the rack, popped G’s batch in to bake. The results looked and smelled delicious and soon joined M’s to cool, whilst I moved on to think about the icing.

Now this was where I wanted to venture into something completely new. I perfected coconut oil icing for M about this time last year, so it was time to take that knowledge and use it to create a different flavour. I turned to my ever faithful companion on these allergy-friendly recipe hunts, Google and discovered this great recipe combining ginger cupcakes with a salted caramel icing. I’ll be honest, salted caramel is not really my thing, but a couple of months ago, M had asked if I could make M-friendly caramel for him and I decided that there was no time like the present to take on that challenge. Rolling my sleeves up, I followed the recipe carefully, tweaking and swapping out ingredients as necessary to meet our allergy needs. I started with making the caramel and was delighted with the result. It does have a slightly unusual flavour because of the rice cream used to make it, but it wasn’t bad for a first attempt and I was certain that M and G would both love it. Once the caramel had cooled, I mixed it in with the coconut oil icing and then piped it onto the top of my cupcakes. A sprinkle of crystallised ginger added the final touches and I ended up with some beautiful cupcakes to serve. G and M both loved the look of them, but to my surprise the icing proved to be just a little too sweet for my sugar-fiend, M. Nevertheless, they’ve been a hit in our household this week and it’s great to have found a way to make tasty dairy-free caramel.

Don’t be afraid to ASK

ask-boltonNot too many months ago, we happened to find ourselves near the beautiful town of Great Malvern and in need of a late Sunday lunch. Much to my surprise, given how small I’d assumed this town was, I discovered through a hurried internet search that Great Malvern itself hosts an ASK restaurant and quick glance at their online menu suggested that we’d be able to feed our dynamic duo there without too much hassle. It doesn’t fail to amaze me that we consistently find ourselves enjoying the food at Italian restaurants given their regular gluten-laden fare of pasta and pizza, but I suppose it should really come as no surprise given how many allergy-friendly foods we found on our recent trip to Italy. They almost always serve a chicken dish in one form or another, so whilst it is near impossible to get M a portion of plain rice to accompany his meal, risotto being their main rice offering, we are happy to eat there and I often recommend them on to others in the allergy community.

img_06291As always the children ordered their perennial favourites when we eat anywhere that has Italian food on offer. G opted for a gluten- and dairy-free pepperoni pizza with extra goats cheese, whilst M had his usual dish of grilled chicken breast and cucumber. Our waiter made sure he fully understood our allergy requirements as well as making a note for the kitchen and checked their allergen menu to make sure that everything we had ordered could be safely prepared for G and M. img_06261We’ve taken to ordering adult-sized portions of meals for both children these days and the generous amounts that arrived were more than enough to satisfy my ravenous pair, with both clearing their plates in impressive fashion.

As ever the allergy-offerings for dessert were poor and G was disappointed that they didn’t serve a gluten-free garlic bread or dough balls for a starter, something she’s become addicted to whenever we visit Pizza Express. We enjoyed our first meal at ASK and it’s always great to have another safe restaurant in our back pocket for future meals out. The Great Malvern restaurant is set in a beautiful location and we had a table looking out over the fantastic view from the upstairs windows.

Rice Two-Ways

When we made the decision to go elemental in an attempt to bring about a reduction in M’s chronic symptoms, I never imagined that the reintroduction of foods would be as fraught and intensely stressful as it has proved to be. In the past 12 months we have made absolutely no progress whatsoever and everyone is stumped about what the root cause of M’s problems actually is, with opinions fluctuating between complications from his EC, “simple” multiple allergies or a physiological problem with his gut. Whilst the teams of medical professionals involved in M’s care try to decide on what direction they should follow next, I’m left stretching my ingenuity to its very limits when it comes to preparing meals for my understandably fed up 10-year-old.

I’m constantly on the search for anything that will make my cooking life that tiny bit easier and a lot more interesting and love finding products that are both M-friendly and a little out of the ordinary. Like many of you I’ve eaten rice for years, but generally just as boiled rice to go with a tasty chilli con carne or egg fried from the local Chinese takeaway and had never really thought much about it. Since rice has become the staple carbohydrate of M’s diet, I’ve come to love the versatility of this ingredient and continue to be delighted by the many versions of it I’ve uncovered along the way. Rice milk, rice porridge flakes, rice cereal, rice flour, rice crackers, rice noodles, rice pasta, rice vinegar and your choice of plain rice: long grain, brown, basmati, wild or black have an overwhelming presence in my kitchen cupboards and so now do 2 rice-based products that I’ve discovered over the summer.

img_08441First are Blue Dragon Spring Roll Wrappers, which do contain a small amount of tapioca starch, but are predominantly made from rice flour. Having recently perfected my own version of lemon chicken to satisfy M’s longing for some much-missed Chinese food, these seemed like a great addition to the repertoire and I couldn’t wait to make both M and G some M-friendly pancake rolls for dinner. If you’ve never attempted to cook with these before, let me tell you that they are not the easiest ingredient to use, but I suspect that a lot more practice will make a big difference. I set up my workspace next to the kettle, filled a shallow baking dish with boiling water and then painstakingly soaked the wrappers, 1 sheet at a time, before filling them with some thinly sliced chicken, cucumber, apple and pear that I had already prepared. img_08461I cooked them in 2 different ways, interested to see which my discerning duo preferred and was very much surprised by the results when they came in. G loved the bigger roll which was just prepared as I described above, whilst M told me he’d opt for the shallow-fried triangles every time. I am thrilled that the wrappers were so well received by both children and can’t wait to see what else I can cook with them as I’m sure that they are versatile enough to be used to create some sweet treats as well as the more traditional savoury dishes.

img_11031The other is a real store cupboard essential and I can’t begin to tell you how excited I was to discover this item when I was perusing the virtual aisles of the fantastic online supermarket that is the FreeFromMarket. As for when the box of Clearspring Brown Rice Breadcrumbs arrived, nestled in the midst of my other purchases, well, Mike and the children were all summoned by my squeals of joy and then left me to my celebrations, shaking their heads sadly in complete disbelief. I am sure that there are so many ways to use the breadcrumbs in my cooking, but I started by preparing a breaded, stuffed chicken breast along the lines of a more traditional chicken kiev. I made a coconut oil and herb mix, which I carefully squeezed inside the cut I’d made in the chicken breast, before coating it liberally with the breadcrumbs. 25 minutes later and img_11091dinner was ready with a golden brown chicken breast tantalising the taste buds with both its look and its smell. They really were delicious and neither child was very willing to sacrifice a mouthful of their meal for Mum to taste-test herself. Now that the summer holidays are over and we’re heading into the autumn, roast dinners will make a more regular appearance in our household and I’m hoping to use these breadcrumbs to create an M-friendly stuffing for us all to enjoy.
