to serve 4
- 3 chicken fillets (diced)
- 350g gluten-free rice krispies
- Oil
- Salt, pepper and any other herbs
- Preheat your oven to 200°C
- Dice the chicken fillets and leave to soak in a bowl filled with either safe oil or safe milk
- Put the gluten-free rice krispies into a food blender and blend until they resemble breadcrumbs
- Add salt, pepper and any other herbs or spices you like. Our favourites are sage or thyme
- Pour your krispie breadcrumb mix into another bowl and then generously coat the diced chicken with the mix
- Spread the individual pieces onto a baking tray. There is no need to add extra oil
- Cook for 15-20 minutes and serve
- They can be enjoyed both hot and cold
