Rice-krispie Chicken Nuggets

to serve 4

  • 3 chicken fillets (diced)
  • 350g gluten-free rice krispies
  • Oil
  • Salt, pepper and any other herbs
  1. Preheat your oven to 200°C
  2. Dice the chicken fillets and leave to soak in a bowl filled with either safe oil or safe milk 20150710_145449
  3. Put the gluten-free rice krispies into a food blender and blend until they resemble breadcrumbs 20150710_140928 20150710_141137
  4. Add salt, pepper and any other herbs or spices you like. Our favourites are sage or thyme 20150710_141045
  5. Pour your krispie breadcrumb mix into another bowl and then generously coat the diced chicken with the mix 20150710_145824
  6. Spread the individual pieces onto a baking tray. There is no need to add extra oil 20150710_145914
  7. Cook for 15-20 minutes and serve 20150710_203444
  8. They can be enjoyed both hot and cold
