Carrot cake

  • 360g grated carrots
  • 750mls water
  • 330g raisins
  • 500g rice flour
  • 2 tsp cinnamon
  • 2 tsp allspice
  • 1/2 tsp cloves
  • 700g caster sugar
  • 1/2 tsp salt
  • 1 1/4 tsp xanthum gum
  • 2 tsp baking soda
  1. Preheat oven to 180°C 
  2. Gently simmer the carrots, raisins, water and spices for 8-10minutes  20130913_114848
  3. Add the sugar and salt and continue to cook for 2 more minutes
  4. Remove from the heat and allow to cool completely
  5. Combine the flour, baking soda and xanthum gum in a large bowl 20130913_122208
  6. Add the carrot mixture and combine until mixed 20130913_122309
  7. Pour the batter into a lightly greased baking pan 20130913_122642
  8. Bake for approximately 1 hour until golden brown 20130913_132523
  9. Leave to cool and then serve   20130913_143621
