- 360g grated carrots
- 750mls water
- 330g raisins
- 500g rice flour
- 2 tsp cinnamon
- 2 tsp allspice
- 1/2 tsp cloves
- 700g caster sugar
- 1/2 tsp salt
- 1 1/4 tsp xanthum gum
- 2 tsp baking soda
- Preheat oven to 180°C
- Gently simmer the carrots, raisins, water and spices for 8-10minutes
- Add the sugar and salt and continue to cook for 2 more minutes
- Remove from the heat and allow to cool completely
- Combine the flour, baking soda and xanthum gum in a large bowl
- Add the carrot mixture and combine until mixed
- Pour the batter into a lightly greased baking pan
- Bake for approximately 1 hour until golden brown
- Leave to cool and then serve
