Microwave Treacle Sponge

  • 110g rice flour
  • 40g sugar
  • 1tsp xanthum gum
  • 1tsp baking powder
  • 100ml water
  • 60ml rapeseed oil
  • 1 tbsp golden syrup
  1. Lightly grease a microwave-proof bowl with oil IMG_0440[1]
  2. Mix the rice flour, sugar. xanthum gum and baking powder in the bowl IMG_0441[1]
  3. Add the water and oil and stir well until you have a smooth batter IMG_0443[1]
  4. Pour the golden syrup into the middle of the mixture IMG_0445[1]
  5. Cover with microwave-safe clingfilm
  6. Cook the sponge on high power in the microwave for 4 minutes
  7. When it has cooked, turn out onto a plate to cool a little before serving IMG_0446[1]
  8. Serve with safe cream, custard or ice cream  IMG_0447[1]
