Buttercream Icing

  • 250g icing sugar
  • 80g free-from spread such as Trex or Pure
  • 50mls rice milk
  • A few drops of your chosen flavouring
  1. Beat the spread in a bowl until soft
  2. Gradually add the icing sugar a spoonful at a time, mixing all the time
  3. You may find the mixture gets very stiff about half-way through, so add some milk to loosen it a little
  4. Continue to add the sugar until it’s all mixed in
  5. Add as much milk as necessary at the end to reach your required consistency
  6. Finally, add the flavouring a few drops at a time, continually tasting until it’s perfect
