Banana & Chocolate Chip Cookies

Vegan, gluten-free, dairy-free, soya-free

makes 12 cookies

  • 1 banana
  • 55g coconut oil
  • 80g sugar
  • 1tsp vanilla extract
  • 120g plain rice flour – I used a blend of 60g white rice flour & 60g brown rice flour
  • 1/4 tsp salt
  • 1/2 tsp baking powder
  • 1tsp xanthum gum
  • 70g Moo-free chocolate
  1. Preheat oven to 180°C
  2. Mash the banana with a fork and then mix well with the softened coconut oil, sugar and vanilla extract 
  3. Fold in the rice flour, salt, baking powder and xanthum gum 
  4. Chop the Moo-free chocolate into small chunks and stir into the cookie dough 
  5. Line a baking tray with baking paper and drop spoonfuls of the cookie dough onto it equally spaced 
  6. Bake for 10-12 minutes and allow to cool 
  7. Enjoy!
