Vegan, gluten-free, dairy-free, soya-free
makes 12 cookies
- 1 banana
- 55g coconut oil
- 80g sugar
- 1tsp vanilla extract
- 120g plain rice flour – I used a blend of 60g white rice flour & 60g brown rice flour
- 1/4 tsp salt
- 1/2 tsp baking powder
- 1tsp xanthum gum
- 70g Moo-free chocolate
- Preheat oven to 180°C
- Mash the banana with a fork and then mix well with the softened coconut oil, sugar and vanilla extract
- Fold in the rice flour, salt, baking powder and xanthum gum
- Chop the Moo-free chocolate into small chunks and stir into the cookie dough
- Line a baking tray with baking paper and drop spoonfuls of the cookie dough onto it equally spaced
- Bake for 10-12 minutes and allow to cool
- Enjoy!
