Rainforest Flapjacks (makes 6-8 slices)
- 70g free-from margarine
- 1 tablespoon golden syrup
- 1/2 teaspoon ground cinnamon
- 100g dairy-free chocolate*
- 50g brown sugar
- 175g millet flakes**
- 1 ripe banana
* I used Moo-free chocolate as it is both soya- and dairy-free
** I used millet flakes, but you can also use porridge oats
- Pre-heat the oven to 180°C.
- Melt the butter, sugar and golden syrup over a low heat
- Stir in the oats/millet flakes and cinnamon
- Peel and mash the ripe banana and then add to the mixture. Stir well
- Chop the chocolate and add to the mixture before taking off the heat
- Tip the mixture into a baking tin and smooth the surface with a palette knife
- Bake for approx. 25 minutes or until the edges are golden brown
- Remove from the heat, leave to cool and then serve
