Rainforest Flapjacks

Rainforest Flapjacks (makes 6-8 slices)

  • 70g free-from margarine
  • 1 tablespoon golden syrup
  • 1/2 teaspoon ground cinnamon
  • 100g dairy-free chocolate*
  • 50g brown sugar
  • 175g millet flakes**
  • 1 ripe banana

* I used Moo-free chocolate as it is both soya- and dairy-free

** I used millet flakes, but you can also use porridge oats

  1. Pre-heat the oven to 180°C.
  2. Melt the butter, sugar and golden syrup over a low heat SAM_1353
  3. Stir in the oats/millet flakes and cinnamon    SAM_1356
  4. Peel and mash the ripe banana and then add to the mixture. Stir wellSAM_1357
  5. Chop the chocolate and add to the mixture before taking off the heat
  6. Tip the mixture into a baking tin and smooth the surface with a palette knife  SAM_1361
  7. Bake for approx. 25 minutes or until the edges are golden brown
  8. Remove from the heat, leave to cool and then serveSAM_1373
