- 2tbsp flaxseed meal mixed with 6tbsp water (2 eggs equivalent)
- 2 bananas
- 1 tablespoon olive oil
- 20g cocoa powder
- 55g rice flour
- 40g ground almonds
- 100mls coconut cream
- 50g chopped glace cherries
- 15g chopped dried cranberries
- Pre-heat the oven to 190°C
- Blend the bananas, eggs and olive oil together and pour into a mixing bowl.
- Mix in the dry ingredients and stir well
- Pour in the coconut cream
- Add the chopped dried cranberries and cherries and mix well to ensure they are fully combined
- Pour into a greased square tray and bake in the oven for 14 minutes.
- Remove cool, and slice into 9 pieces.
