Pear and Apple cupcakes

makes 12 cupcakes

  • 200g rice flour
  • 1.5 tsp bicarbonate of soda
  • 100g brown sugar
  • 1 pear, grated
  • 1 apple, grated
  • 4 tablespoons rapeseed oil
  • 2 tablespoons golden syrup
  1. Preheat oven to 190°C
  2. Mix together the dry ingredients – flour, bicarbonate of soda and brown sugar 20150911_123309
  3. Peel the apple and pear before grating into the dry mix 20150911_123747
  4. Once you have incorporated the grated apple and pear, add the rapeseed oil and golden syrup and mix well 20150911_124036
  5. Spoon your cake batter into cupcake cases and put in the oven for 20-25 minutes until golden brown and springy to the touch 20150911_124401
  6. Enjoy plain or add either buttercream or coconut oil icing 20150912_204048

NB – I used 1.5 times this recipe to bake 2 8″ cakes
