Prawn and Salmon Spaghetti

  • 100g prawns
  • 75g smoked salmon trimmings
  • 1 onion chopped
  • 2 cloves garlic
  • 1 tsp free-from margarine
  • 50g corn
  • 50g peas
  • 1 tomato chopped
  • 5 whole chestnuts chopped
  • 125ml coconut cream
  • 150g spaghetti
  1. Saute the chopped onion and garlic in some free-from margarine
  2. Add the cooked prawns and smoked salmon trimmings to heat through
  3. Add the corn, peas, chopped tomato and chestnuts and continue to simmer on a low heat
  4. Add the coconut cream and stir until heated thoroughly
  5. Mix in the cooked spaghetti (or other pasta) until fully coated and serve
