Chocolate chip cookies

  • 225g plain rice flour
  • 1tsp baking powder
  • 100g free-from margarine
  • 175g caster sugar
  • 1tsp vanilla essence
  • 1 tbsp ground flaxseed meal to replace 1 egg
  • chocolate chips
  1. Stir the flour and baking powder together and rub in the margarine until the mixture resembles fine breadcrumbs 20140119_151349
  2. Mix the ground flaxseed meal with 3 tbsp water as the egg replacement
  3. Stir in the sugar, vanilla essence and the ground flaxseed meal until the dough is smooth
  4. You may need to add a little more liquid to form the dough, but be careful not to add too much as you want the dough to not stick to your hands  20140119_152844
  5. Put onto a floured surface and knead.  If the mixture is too sticky, add more sugar
  6. Add the chocolate chips
  7. Roll into rough cookie shapes and place on a greased baking tray 20140119_155654
  8. Bake at 190°C for 15 minutes or until they turn golden brown 20140119_183736
