- 225g plain rice flour
- 1tsp baking powder
- 100g free-from margarine
- 175g caster sugar
- 1tsp vanilla essence
- 1 tbsp ground flaxseed meal to replace 1 egg
- chocolate chips
- Stir the flour and baking powder together and rub in the margarine until the mixture resembles fine breadcrumbs
- Mix the ground flaxseed meal with 3 tbsp water as the egg replacement
- Stir in the sugar, vanilla essence and the ground flaxseed meal until the dough is smooth
- You may need to add a little more liquid to form the dough, but be careful not to add too much as you want the dough to not stick to your hands
- Put onto a floured surface and knead. If the mixture is too sticky, add more sugar
- Add the chocolate chips
- Roll into rough cookie shapes and place on a greased baking tray
- Bake at 190°C for 15 minutes or until they turn golden brown
