Rice-flour sugar cookies

Makes approx. 24 small cookies

  • 2 cups rice flour
  • 3/4 cup granulated sugar
  •  2/3 cup canola oil
  • 1/2tsp salt
  • 2tsp gluten-free baking powder – I didn’t use this as we haven’t yet confirmed these ingredients as being M-friendly
  1. Preheat the oven to 180°C
  2. Measure out the ingredients into a mixing bowl and combine well.  If the mix is a little dry, you can add extra oil or I added a splash of 7-up to add a little extra flavour to it  20150314_205734
  3. If you can eat fruit, add your choice to the mix and stir well.
  4. Line a baking tray with parchment paper
  5. Take a large pinch of the dough and roll into a cookie shape before placing on the tray  20150314_205747
  6. Bake for 15-20 minutes until golden brown
  7. Leave to cool before eating  20150314_213802
