Makes approx. 24 small cookies
- 2 cups rice flour
- 3/4 cup granulated sugar
- 2/3 cup canola oil
- 1/2tsp salt
- 2tsp gluten-free baking powder – I didn’t use this as we haven’t yet confirmed these ingredients as being M-friendly
- Preheat the oven to 180°C
- Measure out the ingredients into a mixing bowl and combine well. If the mix is a little dry, you can add extra oil or I added a splash of 7-up to add a little extra flavour to it
- If you can eat fruit, add your choice to the mix and stir well.
- Line a baking tray with parchment paper
- Take a large pinch of the dough and roll into a cookie shape before placing on the tray
- Bake for 15-20 minutes until golden brown
- Leave to cool before eating
