Apple & Pear Scones

  • 275g rice flour
  • 1/2 tsp bicarbonate of soda
  • 1/2 tsp xanthum gum
  • 4 tbsp golden caster sugar
  • 60g solid coconut oil
  • 1 tsp vanilla extract
  • 2 small apples, 1 grated and 1 chopped
  • 1 small pear, grated
  • 125mls rice milk
  1. Preheat the oven to 200°C
  2. Tip the rice flour, bicarbonate of soda, xanthum gum and coconut oil into a bowl and then mix using the rubbing-in method until it looks like fine bread crumbs 20151003_104738

  4. Add all of the apples and pear and the vanilla and mix well 20151003_105537
  5. Pour in the rice milk and stir it in, folding the dough over until it is smooth 20151003_110036
  6. Flour a pastry board and roll out the dough until it’s around 3cm deep 20151003_110255
  7. Cut into rounds using a cutter or shape using your hands and place onto a baking sheet covered with baking parchment and brush with a little extra milk20151003_111630
