- 275g rice flour
- 1/2 tsp bicarbonate of soda
- 1/2 tsp xanthum gum
- 4 tbsp golden caster sugar
- 60g solid coconut oil
- 1 tsp vanilla extract
- 2 small apples, 1 grated and 1 chopped
- 1 small pear, grated
- 125mls rice milk
- Preheat the oven to 200°C
- Tip the rice flour, bicarbonate of soda, xanthum gum and coconut oil into a bowl and then mix using the rubbing-in method until it looks like fine bread crumbs
- Stir in the sugar
- Add all of the apples and pear and the vanilla and mix well
- Pour in the rice milk and stir it in, folding the dough over until it is smooth
- Flour a pastry board and roll out the dough until it’s around 3cm deep
- Cut into rounds using a cutter or shape using your hands and place onto a baking sheet covered with baking parchment and brush with a little extra milk
- Pop into the oven and bake for approximately 12 minutes or until golden
- Allow to cool before serving
