Canadian Pancakes

  • 200g white flour
  • 3 tbsp white sugar
  • 2 ¼ tsp baking powder or xanthum gum
  • ¼ tsp salt
  • 2 ½ tbsp margarine
  • ¾ cup water
  1. Sift flour, sugar, baking powder and salt together in a mixing bowl
  2. Melt 2 1/2 tbsp margarine in frying pan until melted
  3. Pour the melted margarine into a small bowl or jug, add water and mix well
  4. Stir liquid mixture into the dry ingredients to form a thick, but liquid batter,  If the mix is still a little thick, add more water until it reaches a consistency you’re happy with
  5. Cook the pancakes in a frying pan over a medium heat.

NB – this will prepare what I term “North American” style pancakes.  They are slightly thicker than the more typically European style ones.
