Crispy Fish Balls

to serve 4

  • 2 fillets of Haddock or other white fish
  • 350g gluten-free rice krispies
  • Oil
  • Salt and pepper
  • Herbs
  1. Preheat your oven to 200°C
  2. Cook your haddock or other white fish fillets until ready 20150723_175844
  3. Whilst the fish is cooking, put the gluten-free rice krispies into a food blender and blend until they resemble breadcrumbs 20150710_140928
  4. Add salt and pepper to taste and our your krispie breadcrumb mix into another bowl 20150710_141137
  5. Once your fish fillets have cooked and cooled slightly, remove the flesh and blend into a paste with some safe oil, salt and pepper.  If you want to add any other herbs, add these too 20150723_181015
  6. Form the blended fish mixture into balls and then roll in the breadcrumb mix to coat thoroughly 20150723_181914
  7. Put the individual balls onto a baking tray before placing in the oven. There is no need to add extra oil 20150723_182013
  8. Cook for 15-20 minutes and serve 20150723_190656
