- 250g rice flour
- 300mls sparkling water, cold
- salt, pepper and herbs to taste
- Weigh out your rice flour into a bowl and slowly pour in the sparkling water, mixing thoroughly as you do so
- The batter should be easy to pour, but thick enough to coat your ingredients
- Add salt, pepper and herbs to taste
- You can add more or less flour to reach the consistency you’re looking for and can also use cold tap water if you prefer
- To make a sweet version, use full-sugar lemonade to replace the sparkling water and omit the seasoning. You could add cinnamon, ginger or vanilla instead.
