Rice Flour Tempura batter

  • 250g rice flour
  • 300mls sparkling water, cold
  • salt, pepper and herbs to taste
  1. Weigh out your rice flour into a bowl and slowly pour in the sparkling water, mixing thoroughly as you do so
  2. The batter should be easy to pour, but thick enough to coat your ingredients
  3. Add salt, pepper and herbs to taste
  4. You can add more or less flour to reach the consistency you’re looking for and can also use cold tap water if you prefer
  5. To make a sweet version, use full-sugar lemonade to replace the sparkling water and omit the seasoning.  You could add cinnamon, ginger or vanilla instead.
