Lemon Sponge

  • 200g self-raising flour
  • 2tsp baking powder
  • 75g caster sugar
  • 125g margarine
  • 150ml lemon juice
  • Zest of half a lemon
  • 175ml cold water
  1. Preheat the oven to 190 C.
  2. Beat the margarine and sugar until pale and fluffy.
  3. Sift in the flour and baking powder and then gently fold in the water, lemon juice and zest.
  4. Bake for 30 minutes or until golden and springy.
