Banana Bread

Vegan, gluten-free, dairy-free, soya-free

  • 3 large bananas
  • 75g rapeseed oil
  • 100g brown sugar
  • 225g plain rice flour – I used a blend of 125g white rice flour & 100g brown rice flour
  • 3tsp baking powder
  • 1.5tsp xanthum gum
  • 100-150g Moo-free chocolate
  1. Preheat oven to 190°C
  2. Mash the bananas with a fork before mixing with the oil and sugar 
  3. Fold in the rice flour, baking powder and xanthum gum, mixing the ingredients together well 
  4.  Break the Moo-free chocolate until small chunks and add to the mixture 
  5. Add to a well-greased loaf tin and bake in the oven for 20 minutes 
  6. Check the top and if the cake is browning, cover with tin foil before baking for another 20 minutes
  7. Remove from the oven and allow to cool a little before slicing and serving
