Vegan, gluten-free, dairy-free, soya-free
- 3 large bananas
- 75g rapeseed oil
- 100g brown sugar
- 225g plain rice flour – I used a blend of 125g white rice flour & 100g brown rice flour
- 3tsp baking powder
- 1.5tsp xanthum gum
- 100-150g Moo-free chocolate
- Preheat oven to 190°C
- Mash the bananas with a fork before mixing with the oil and sugar
- Fold in the rice flour, baking powder and xanthum gum, mixing the ingredients together well
- Break the Moo-free chocolate until small chunks and add to the mixture
- Add to a well-greased loaf tin and bake in the oven for 20 minutes
- Check the top and if the cake is browning, cover with tin foil before baking for another 20 minutes
- Remove from the oven and allow to cool a little before slicing and serving
