Chocolate Crazy Cake

  • 120g rice flour
  • 60g tapioca flour
  • 3 tbsp cocoa
  • 200g granulated sugar
  • 1 tsp bicarbonate of soda
  • 1/2 tsp salt
  • 1 tsp white vinegar
  • 1 tsp pure vanilla extract
  • 5 tbsp vegetable oil
  • 225mls water
  1. Preheat oven to 175°C
  2. Mix first 5 dry ingredients in a greased baking tray
  3. Make 3 depressions in dry ingredients – two small, one large
  4. Pour vinegar in one depression, vanilla in the other and the vegetable oil in the largest one 20140912_211422
  5. Pour water over and mix well until smooth 20140912_212106
  6. Bake on middle rack of oven for 30 minutes.
  7. Let cool, cover with icing and enjoy! 20140912_223911
