- 120g rice flour
- 60g tapioca flour
- 3 tbsp cocoa
- 200g granulated sugar
- 1 tsp bicarbonate of soda
- 1/2 tsp salt
- 1 tsp white vinegar
- 1 tsp pure vanilla extract
- 5 tbsp vegetable oil
- 225mls water
- Preheat oven to 175°C
- Mix first 5 dry ingredients in a greased baking tray
- Make 3 depressions in dry ingredients – two small, one large
- Pour vinegar in one depression, vanilla in the other and the vegetable oil in the largest one
- Pour water over and mix well until smooth
- Bake on middle rack of oven for 30 minutes.
- Let cool, cover with icing and enjoy!
