“Little pockets of heaven”

That was G’s description of the amazing Borough 22 doughnuts that I brought back for her from my stint as a judge at the Free From Food Awards 2016 at the beginning of February. I had been impressed with the quality of these delicious allergy-friendly treats when I’d tasted them during the Tea-time treats category of the awards and was delighted to find that my somewhat fussy 12 year-old was showing a similar enthusiasm as soon as the first bite entered her mouth. She’s not usually given to waxing lyrical about anything, so these words constituted high praise indeed and the only disappointment was the look on M’s face which he just couldn’t hide, even whilst masterfully trying to celebrate his sister’s excitement with her. It was at that point a tiny seed of inspiration started to sprout and I soon had a cunning plan up my sleeve which I was determined to pull off if at all possible.

My hope was based on the comprehensive ingredients list found on Borough 22’s website and these promising words “We use the following ingredients which, where possible, can be substituted if you have an intolerance to them or are vegan/ vegetarian/ lifestyle conscious…if there are any that don’t agree with you then please let us know. Because we bake to order in small batches we will try our very best to substitute it for something that you can have!” Hardly pausing for breath and most definitely with every part of my body tightly crossly, I penned a quick email to ask if there was any possibility of a doughnut recipe that would cater for M’s particular and restrictive food requirements, stressing that I completely understood that this might be a challenge too far. I included my review from the #FFFA16, told them just how thrilled G had been to taste their doughnuts and then sat back to nervously wait a response. The return email, when it came, led to a lengthy phone-call, a flurry of e-mails and the development of what is rapidly growing into a great new friendship.

IMG_3397Ryan Panchoo, owner of Borough 22, is a truly inspirational man, who had a vision and didn’t just make it a reality for himself and his family, but chose to share it with the greater food allergy community too. It all started with the observations of his food-allergic wife and children that restaurant desserts were usually fruit or sorbet and lacking in quality and imagination, and the dream to create one dessert for everyone; something that tasted great, was of a great quality and that initially was both gluten- and dairy-free. He started with chocolate brownies, created a recipe that received the thumbs-up from family and friends alike and could then quite easily have stopped there. However, in a move that I feel really reflects his determined nature, Ryan decided to experiment with doughnuts and despite never having baked one before in his life, researched and tweaked recipes until his multiple allergen-friendly and delicious treat was perfected.

Ryan tells me that his ambition was never to sell his brownies or doughnuts, instead he simply wanted to be able to enjoy safe sweet treats at home with his family; but his friends had a different idea and in October 2014, Borough 22 was launched. It really is in the tradition of the very best “rags-to-riches” fairy stories to learn that he has never invested millions in some snazzy marketing campaign, instead depending on personal recommendations and his use of social media to spread the word. 12694884_571032356387193_4099041063554217609_oHis colourful and eye-catching Instagram photographs led to a situation that he willingly admits was surreal, when he found himself sitting in a meeting with a buyer for Selfridges, discussing exactly what he needed to do to sell in their prestigious food hall and, even more impressively, how they could help him achieve it.

Nearly 18 months on, Borough 22 is a flourishing business, who sells its wares in several outlets in South East London (The Plumstead Pantry & Good Food Catford) as well as through mail-order via their website. The business with Selfridges is currently on hold as Ryan searches for a suitable manufacturing partner to help him meet demand as he still works full-time as a Project Manager for a property investment company. Once that trickiest of partnerships is settled, the plan is to return to Selfridges and hopefully develop the business even further. 12717848_563378083819287_7037755747881912271_nI’m delighted to be able to share that Borough 22 was also shortlisted in both the “Teatime!” and “Start ups and Small Producers” categories of the #FFFA16, although everyone, Ryan included, will have to wait until the awards ceremony in late April to find out just how well they did. To shortlist once is impressive, twice simply astonishing, but I’m honestly not surprised as this is a product we are more than happy to endorse and recommend to everyone, food allergies or not.

Even better news for the 7Y2D household’s youngest member at least, Ryan agreed to try his best to adapt his recipe and accommodate M’s complicated food allergies. I decided not to mention our plans to M or G until I knew whether it was a possibility or not and even on the day I took delivery, kept quiet until the doughnuts were safely in my hands. However, as those who know me will attest, my excitement on that Friday was impossible to hide and I spent the day counting down the hours until I could pick my pair up from their respective schools and share the news. I captured every precious moment of the “big reveal” not just for posterity’s sake, or for my blog, but most importantly to share with Ryan himself:

I’m not sure that you really need my words to tell you about M’s response as these photos pretty much capture it all. I will tell you that M was left speechless and in tears when he realised these doughnuts were for him. I will confess that as he squeezed me tight and desperately sought to compose himself, I had to swallow down the huge lump in my own throat and wipe away a few stray, but happy tears. I will gladly share M’s own endorsement that Ryan can “…succeed at whatever he bakes Mum, because these doughnuts are almost better than birthdays..!

Ryan, you may be a full-time project manager by day, but in my little allergy-sufferer’s eyes, you’re a true superhero by night.

The Croissants Adventures: Part Deux

One of my biggest challenges for last week was set by M’s teacher, when she let me know on the Tuesday that they would be engaging in a spot of French role-play and would be tasting hot chocolate, croissants and other traditional French breakfast foods during the lesson. She was anxious that M shouldn’t feel left out and asked whether there was any chance I could send in something “…M-friendly and close to a pastry…” for the activity. The thing is that there really isn’t anything readily available that is even vaguely similar to a French pastry that is based on M’s handful of safe foods and so I knew this was going to be a baking challenge I needed to tackle and quickly. break05My starting point was actually a conversation with M as there was no need to stress about how to create a French-inspired masterpiece for him, if he’d simply be satisfied with a rice krispie treat instead. We started on the matter of the hot chocolate and despite his desperate bids to start his cocoa trial weeks before Easter, rather than when planned, he quickly changed his tune – well who’d want to miss out on an Easter Egg if it’s up for offer?! – and settled on rice milk flavoured with banana nesquik for his drink. However, he was less open to be swayed on the matter of the croissants and I promised to at least investigate if there was anything I could do before the Friday deadline dawned. Fortunately, 2 years ago the school had hosted a MFL (Modern Foreign Languages) Day and whilst G’s needs were met by the purchase of some delicious Genius pain au chocolat, even then there was nothing I could buy that would suit M’s trickier requirements. I had researched and adapted a great vegan recipe for croissants and baked a batch that kept him happy, even if they were not quite up to my more exacting standards. I knew I had added that recipe to my blog and quickly had a skim-through the list of ingredients to see if a new and improved M-friendly version was even possible.

For once, luck seemed to be on M’s side and, after a quick internet search for possible alternatives to the yeast I’d needed before, I was able to tell my excited child that I was willing to at very least give it a go. With plenty of warnings that there were no guarantees regarding taste or texture, I tentatively started the long and drawn-out process of making the pastry dough. I swapped coconut oil for the Trex and a bicarbonate of soda and xanthum gum mix for the yeast. The dough was prepped on the Tuesday night and I popped it into the fridge for a couple of days until I needed it: that was a big mistake. IMG_0207[1]The coconut oil solidifies at cold temperatures and by the time I was ready to make and bake the croissants on Thursday evening, my pastry was now filled with marble-sized lumps of coconut oil that I just had to remove. Whether this made much of a difference to my final product, I really don’t know, but given that a lot of the flavour in a French pastry comes from the fat added to it, I don’t think I did myself any favours.

I rolled and folded, and folded and rolled for a good 25 minutes on Thursday evening, until my dough was smooth and no longer a sticky mess that couldn’t be worked and I carefully cut triangles and rolled each one into the croissant shape, complete with slight curve. With the excess dough, I formed 2 pastry cases and attempted a couple of apple turnovers as an unexpected treat. Once all my pastries were ready, IMG_0209[1]I popped them into the oven, set the timer and attempted to forget all about them until the bell rang. The turnovers ended up being a little overdone and I wasn’t entirely convinced by the croissants either, though both children devoured them eagerly and with far more gusto than I was expecting!

This morning I was asked by a friend if I was planning to make a third attempt and I didn’t know what exact answer to give. The time and patience needed to make this pastry was tough to fit in alongside the everyday hustle and bustle of our household, but I reaped huge rewards. M and G were delighted with this different treat and I know that with a little more tweaking and a lot more practice, I might end up with a M-friendly pastry that would open up a lot more possibilities for meals for him. Not just croissants or apple turnovers, but chicken pot pies spring to mind too. So my honest answer probably should be:

Just watch this space!

March comes in like a lion

Ever had one of “those” days? You know, the ones where you’re already insanely busy and barely have time to breathe and yet everything that could conceivably go wrong, does go wrong to an unbelievable extent, plus those few extra and unexpected hiccups and challenges that appear along the way. After the last 48 hours, I appear to be heading into not just one of “those” days or even one of “those” weeks, but more realistically, one of “those” months. The next few weeks promise to be extremely busy and I’m beginning to wonder how I’ll get everything done on time and in the right order. You know it’s a sad state of affairs when we’re only on the third day of the month and I’m already counting down to the start of the next one.

The month started with our rather low-key marking of “Dydd Dewi Sant”, or St David’s Day for those of you not au fait with the Welsh language. Fortunately, this simply required some frantic scrabbling around my drawers hunting out the daffodil brooches that the children and I wear every year and remembering to pin them securely to school jumpers before heading out the door. The children were both keen and proud to wear their daffodils, though equally unimpressed that their friends didn’t know why they wearing them and so took the opportunity to quickly educate their classes. If I’d been more organised, I might have posted on the day itself, but I wasn’t and I didn’t, so this is me recognising that celebration of my heritage now.

But after that gentle start to the month, things have already started to ramp up. The next four weeks include:

gin-and-tonI’m sure that there will be things I’ve already forgotten and likewise, there’s no doubt that there will be more items added to my list as March passes by. Needless to say, I will be blogging about many of these occasions and just how I overcome the challenges of taking my M-friendly cooking and baking a step further than I ever imagined possible. Once all of these things are out of the way, it’ll be time for a well-deserved drink and, in case you’re wondering, mine’s a large gin!

Children In Need 2015

Along with the rain, wind and grey skies, November also brings with it the star-studded evening of light entertainment that is BBC’s Children in Need. Last year they launched the theme of “Be a Hero” for the event and my pair decided to dress as their personal heroes of Princess Leia and M’s gastro consultant at GOSH. This year, the dressing up part was a little easier to achieve – G headed off to school in her own wardrobe selection and M wore his “Super Tubie” top as we really couldn’t think of any better superhero for him to represent. You might think that this meant I escaped lightly for this year’s celebrations, but for those of you who know me, or follow me on FB, you will be well aware that my youngest actually had very different ideas about how we should spend the night before the big day itself, and what a long night it turned out to be!

His school decided to hold a “Great Children-in-Need Bake-off” competition as part of their fundraising efforts and naturally M was keen to take part. His first step was to decide what he wanted his cake to look like and eventually settled on cupcakes rather than one big cake as they would be easier to sell as part of the school cake sale after the competition was judged. Instead of decorating a dozen individual cupcakes, 20151111_195743M wanted to use them to create Pudsey Bear’s face as best he could. Design done, Wednesday evening saw M whipping up the cake batter with a little supervision from me and the resulting 24 perfectly baked M-friendly cupcakes were left to cool overnight before he tackled the big job of the icing.

One evening to ice to perfection might sound like more than enough time, but when you take into consideration the after-school archery club requiring late pick-up, the long-awaited ‘flu vaccination appointment, the unavoidable homework and the much-needed dinner, you’ll begin to understand why we couldn’t get started until close to 6.30pm. Of course, having baked cakes that he could eat, M was keen to ice with safe icing too, so my first job was to help him make enough coconut oil icing, tinted a rather fetching Pudsey Bear yellow, to cover them all. 20151112_192831We had already made a simple cardboard frame in the shape of Pudsey’s head to hold the cupcakes securely and,having fitted 10 cupcakes neatly into place, M got started on the icing.

It was his first attempt with an icing bag and I have to say I was impressed. M handled the bag and nozzle like a pro and did what I’d consider to be a really good job for his very first go. Watching him I could see how much his motor skills have improved since he was first diagnosed with dyspraxia and he actually made a relatively fiddly task seem remarkably easy. Yellow icing piped, next came the task of rolling out and shaping the other colours to make Pudsey’s spotted bandage and facial features. He tweaked and adjusted until he was finally satisfied with the end result and I have to say it was a job well done. Whilst he couldn’t quite eat all of the cakes, he could eat those covered just with the yellow icing – the ears! – and for the first time in a long time, M knew he’d be able to buy a cake at the school cake sale!

Now, for most people that would be a great place to stop; but oh no, not in our slightly mad household. Whilst we’d been browsing cookery books and the internet for ideas for his final cake design, M had spotted some Pudsey Bear cake pops and was keen to see if we could make some of those in a M-friendly version too. Cue some hurried reading on my part accompanied by much scratching of my head as I tried to work out a recipe that didn’t involve chocolate in some shape or form. I couldn’t find a single chocolate-free cake pop recipe, so did the next best thing and came up with my own.

20151112_204555I crumbled 8 cupcakes into a bowl and was delighted to see that the grated apple and pear in the cake mix gave enough moisture to form balls. M cut up some drinking straws as I carefully moulded our cake balls and stuck them to the sticks to create the lollipop shape. My full recipe is here, but let’s just say it took multiple moves between table and freezer as well as some much-needed help from all family members on hand to achieve the final look. The ones M decorated for school were not safe for him to try as we ended up using fondant icing, but we did try a few attempts with the coconut oil icing and I reckon with a few more tries, we might have those sussed.

20151113_082414It turned out to be a later night than planned, but M ended up with 2 entries to the school competition he could be proud of and was delighted that nearly all of his cakes sold at the fundraiser on Friday.

The Beauty of Brighton

Having made the epic journey to Hastings to dip our toes into events of the past, we took full advantage of being near the South coast and decided a side trip to Brighton was in order. Our Sunday started at a slightly slower pace and once the unavoidable homework was out of the way, we jumped into the car to head an hour west to our destination. I achieved the ultimate moment of parenting success, entirely unplanned, article-1363789-0D813C3A000005DC-44_964x628when G spotted the infamous white chalk cliffs of the area. I hadn’t realised it was something she had learned a little about in geography this term and mentally gave myself a pat on the back for ticking the boxes for both her history and geography classes.

Following what seemed like an army of motorbikes of all shapes, colours and descriptions into Brighton, we found our way to a centrally located car park before heading out on foot. We had managed to park strategically close to the main shopping centre and started our short visit with lunch at what has become one of our all-time favourite allergy-friendly restaurants, Wagamama. As at our home branch, their service here was phenomenal, the attention to detail spot on and we all enjoyed food that we knew would be reassuringly safe for both M and G. Once the most critical part of our day was dealt with, we walked to our final destination for the afternoon, 20151011_124225the Brighton Pavilion. A new experience for all of us, although I have seen it from the outside before; and what an amazing experience it was.

The children were astounded to see the Indian-inspired splendour of the Royal Pavilion buildings in Brighton – another big tick here as M will be studying India later in the year! – and keen to listen to the audio guides telling them more about the design, build and use of the Pavilion since it was first transformed from modest seaside villa to magnificent palace for King George IV in 1815. M fell in love with the Banqueting Hall with its impressive dragons, life-like lotus leaves and the 30-foot high chandelier, covered in over 50,000 crystals, hanging in the centre of the room. Equally amazing was the music room, which has been painstakingly restored, not just once, but twice since 1975 due to excessive damage caused first by fire and latterly by storm damage. G and M also loved trying to spot the secret doors, behind which were often hidden one of the multitude of toilets in the place or access passages for the servants so that King George wouldn’t see them as they went about their work.

Indian-Soldiers-in-the-Music-RoomThere is currently a photo exhibition about the role the Royal Pavilion played during WWI and Mike and I were fascinated to read about the conversion of this once royal palace to a hospital for troops from the Indian Corps wounded on the Western Front in France and Flanders. As we walked from room to room inside the Pavilion admiring all the artefacts on display, there were often also photos showing how each room had been converted for use during the war. Huge efforts were made to not only protect the historical elements of the palace, but also to make these injured soldiers feel comfortable and “at home” during their convalescence. What struck me the most was a statistic about the number of patients treated during the 14 months it was open (though please forgive me if I misquote as my recollection is perhaps a little hazy): between December 1914 and January 1916, around 2,500 Indian patients were treated and only 18 died. Amazing when you think how horrific many of the injuries suffered by those troops were. Following the Indian military hospital, the Pavilion was then used for a further 4 years as a hospital for British amputees, who not only had wounds treated and prosthetic limbs fitted, but were also then rehabilitated to develop skills to help them in their later lives once the war had ended.

The Brighton Royal Pavilion is a truly captivating and beautiful place to visit, with a fascinating history and it delighted us all. We spent a great couple of hours exploring the rooms and admiring the architecture and I’m glad that we were able to make that stop before heading back home after our busy weekend.

Fast food – home-made style!

We are generally not a fast-food eating family, which, given the array of allergies we’ve had to deal with over the years, is probably a good thing. It’s not something we’ve noticed we’re missing out on and I doubt we’d ever be burger joint regulars even without the allergies, but all that being said, there are definitely times when being able to pick up a burger and chips or to grab fish and chips from the chippie would make feeding the family one less headache to deal with at the end of a busy day. I don’t think the children have ever really felt like they’re deprived in this area, especially as there were occasions before allergies became a big deal or we’d ever even heard of EGID that we would treat them whilst on holiday; GcsqwFsrRVGMfVc18IAf_imagebut there have been a couple of events recently where M has really struggled with not being able to eat on the go like so much of the rest of the world.

The first was back in July, he went to a friend’s paint-balling birthday party, which was followed by lunch and birthday cake at the local McDonald’s. M was brilliant. He was keen to join in and spend the time with all his friends and asked me to take along some safe food for his lunch. He sat with them whilst they enjoyed their Happy Meals and asked his friend’s Dad if he could have a small portion of fries to smell at the same time. This may sound strange and it’s most definitely heartbreaking to see, but is a coping mechanism he picked up from a couple of the amazing children we met during his GOSH stay last year. It is widely reported that if you lose one of your senses, the others become more acute to replace it and it is this theory that has been put into practice here. M may not be able to eat many of his favourite foods any more, but he can still garner great satisfaction from enjoying their distinctive smells instead. When you consider that your sense of taste is hugely influenced by your sense of smell, after all we all know how bland food can seem when we’re struggling with a heavy head cold, then I guess that it’s no wonder that M finds such enjoyment from smelling what he can’t eat.

With the party behind us, the issue of fast food didn’t raise its head again until just a few weeks ago following a family evening out at a local art exhibition. I had managed to feed G and M before we headed out the door, but Mike and I, no strangers to late night meals, decided that the timing was such that we could only grab something on our way back home. We stopped to quickly pick up burgers and almost instantly both children went into minor melt-downs. I knew that a lot of their complaints were the result of the late night and a desperate need to get to bed and sympathised with their frustrations at not being able to eat something, anything “normal” for a change. I put my thinking cap on and determined to create a meal that could somehow replace the humble burger in our household and give the children the taste sensation they were craving. 20150925_190329I remembered that a couple of summers ago, I had created a fantastically tasty lamb and mint burger recipe and I wondered if I could take that basic recipe and tweak it to meet M’s new dietary needs.

The great news is that I absolutely could. We buy our fresh meat, fruit and vegetables from a local co-operative and one of the ingredients I had spotted before was minced chicken. Adding a mix of seasonings and herbs as well as a generous helping of golden syrup, I prepared some great tasting chicken burgers. I whipped up a batch of rice flour pancakes to replace the bread roll for M, though we’ve decided that my flatbreads would work equally well. They were declared an almost instant success by both M and G, who have asked for them on more than one occasion since. Even better, I discovered that I could use the same recipe to create mini meatballs, which M enjoyed with rice pasta drizzled with a little rapeseed oil, some diced cucumber and a handful of additional herbs. So, one simple recipe led to 2 great new meals for my now slightly-less-moody children – a job well done!

Risotto – the M-friendly way!

This could come as something of a surprise to some of you, especially when you consider that rice has been a staple ingredient for us since February, but until recently I really hadn’t thought of making a simple risotto for M. We love risotto in our house, which really makes this lack of regard inexcusable: the children have been eating my home-made version since they were tiny and yet I hadn’t ventured down this particular route in my meal creations for him. Keep-It-Simple-Design-SimplicityJust as with the gnocchi – although risotto is absolutely nothing like as complicated to make a those Italian masterpieces – I’ve been keeping to the mantra of “easy meals are best” for weekday evenings and somehow risotto had escaped my attention.

Our dinner out at Trewithen brought this meal back to the forefront of my consciousness, when I enjoyed the most mouth-wateringly delicate and delicious flavours of their prawn and smoked salmon risotto. The perfect balance of strong flavours and the creamy deliciousness of the dish reminded me of just why it has always been a firm favourite of mine and I determined then and there to see if I could create a M-friendly version that might make the grade.

Taking inspiration from the Trewithen marinade for the chicken, which won such huge acclaim from M that I ended up asking the chef for his recipe, I created my very own nod to a stock as M is obviously not able to eat any of the stock-cubes readily available on the market due to their long lists of ingredients. 20150909_173602I cooked off some sage, thyme and parsley with a little salt and pepper in some Cornish rapeseed oil until an aromatic smell arose from the pan and then added the arborio rice and chicken, before adding my final ingredient of rice milk and leaving it all to simmer in my usual “one pot” approach to risotto.

The end result smelt, well, good enough to eat and I was keen to see how my young gourmand rated my first attempt at a M-friendly risotto. He said little, but the resulting request for seconds really told me everything I needed to know and so another recipe has been added to the 7Y2D repertoire!

Perfect pancakes

During our recent GOSH appointment, the conversation naturally turned to the food I’m cooking for M these days and how we could continue to vary the options available to him with such limited ingredients. The subject had turned to our plans to introduce white fish and whether there were any M-friendly free-from fishfingers on the market, which there aren’t. I was just saying that I had perfected a rice-flour tempura batter, which would be ideal for making fish bites, when M, without looking up from the handheld computer device he was engrossed by, piped up to inform them that “…Mummy cooks me chicken nuggets and deep-fried rice-balls and flatbreads and pancakes…” before carrying on with his game. The conversation paused briefly as the dietician took note and then carried on from there, but it made me realise that I had never shared my rice-flour pancake recipe and I vowed to change that as soon as I could.

20141007_173343Pancakes are one of those recipes that I attempted very early on in our free-from journey and are still a family favourite 4 years on. I make the big, fluffy ones most associated with North America and use the batter as a basis for other savoury treats such as corn or courgette fritters. The basic recipe contains very few ingredients and proved easy to convert to the updated M-friendly version that you can find here. I flavour them with a variety of green herbs and they form a tasty accompaniment to any meal, enjoyed by the whole family, not just M and I even cooked them recently when he had a friend round for tea, where they proved to be a hit.

One of the best things about these pancakes, other than how quickly you can whip up a batch, is just how versatile they can be. With a few careful choices about flavours, they can be either savoury or sweet and both have proved popular with M. They will also form the perfect platform for our mini-challenges on spices and flavourings over the coming weeks, which I know M can’t wait to try.
