A Quick Pudding Dilemma

On Saturday afternoon I spent some time reading back through my National Eosinophil Awareness Week blog posts from previous years, looking for a little inspiration for those I’ll be writing to mark this year’s week, which is fast approaching. I expected to spend a good 20 minutes reminiscing and little else, 0c0dc8797599764caae7d88291139822but instead found myself being led in an entirely different direction as the very first post I re-read inspired me in a completely unexpected way.

I’m always on the lookout for new menu ideas for M and whilst we really don’t need any more sweet options, the lure of a quick and easy pudding was too good to resist. I had a look at the original recipe I had posted, but wondered if there was a more M-friendly one already out there, which would only require the very slightest tweaking on my part. To my delight I found an almost perfect vegan recipe, where all I needed to do was change the flour and oil to suit M’s restricted dietary needs. I was particularly excited about the fact it could be cooked in the microwave as so often puddings for M take a lot longer to prepare and cook, something which requires a level of planning ahead which doesn’t always happen in our household.

IMG_0446[1]Recipe adapted, ingredients checked and with 5 minutes on the clock, I whipped up the sponge batter, set the timer on the microwave and waited with bated breath for that final ping which would tell me if it had been a success or not. As always, the children’s reactions are the best indication of whether I’ll be cooking a dish again and this one has definitely earned a place in my repertoire. It’s an easy pudding to make with only a handful of ingredients and can be cooked in 4 minutes with the help of a trusty microwave. M and G both gave it a massive thumbs up and enjoyed finishing it off for Sunday tea. Even better, I’m sure it can be easily adapted to use my M-friendly lemon curd instead of the golden syrup, or any safe jams to change the flavours, which really does make it a success in my book too.

A Birthday* surprise (*cake recipe included!)

11009339_10152614451586123_8225188594845865541_o20140912_225331Six months ago I tackled the challenge of a birthday cake for M, where the only ingredients he could eat safely didn’t lend themselves to whipping up a tasty sponge and he ended up with a 3-tier Cluedo-themed “fake” cake. Six months before that, I adapted a crazy cake recipe to create a M-friendly chocolate masterpiece for my Mum’s milestone birthday.

Somehow it seems fitting that we’ve come almost full circle in our cake journey and I’ve recently found myself facing the task of another birthday cake for Mum and, more than that,  one which could be eaten and enjoyed by us all. The apple and rice flour cupcakes I’ve been making have been a real winner with the children, but the ever-persistent problem of a granular taste to these bakes, no matter what I’ve tried, meant that I was desperate to find an alternative and better recipe to mark this special occasion. Despite frequent google searches, that recipe was proving to be irritatingly elusive and it was only when we finally achieved a fifth safe food for M that I struck birthday cake gold.logo-eureka-01

To be perfectly honest, it really all came as something of a surprise success as I had no great hopes of yet another search turning up a rice flour cake that would 1) accommodate M’s restricted diet and 2) taste delicious. Despite my doubts, I thought it worth a look with our new ingredient of pear added to the mix and came across this easy recipe for pear and rice flour cupcakes that were not only gluten- and dairy- as advertised, but also egg- and soya-free too. I decided to do a test run and made a quick batch whilst G and M were in school. By the time they arrived home, the house was filled with the tantalising smell of fresh baking and M’s nose instantly went into impressive action as he begged to know if he could taste-test the cakes I’d been preparing that afternoon. Three cupcakes quickly disappeared from the cooling rack and I was thrilled to discover that there was none of that unpleasant granular taste that I’ve come to associate with rice flour baking. With an instant hit on my hands, I now needed to decide whether to attempt a cupcake tower for my Mum or see if I could cook a more traditional cake using the same recipe.

Due to an abundance of apples in our household at the moment – the benefit of apple trees conveniently located at my Mum’s, my office and at a friend’s – I tweaked the recipe to include some apple and reduced down the original quantities of oil and syrup as the original cupcakes had been a little too sweet for my liking. I waited nervously as the cakes baked, fingers tightly crossed that the larger layers would turn out as well as the cupcakes had and I needn’t have worried. The cakes looked impressive and I now have yet another great recipe to add to my list. Having left them to cool in the fridge (no #GBBO-style “wafting” in my household!) I sandwiched them together with some home-made apple purée before turning my mind to the knotty subject of how to decorate it all.

appleswansNow, if I had seen at that point episode 7 of #GBBO, I might have taken my inspiration from Paul’s amazing apple swans and spent my afternoon carving the intricate decorations to top the cake, but fortunately, or maybe unfortunately – I suppose it depends on your point of view – that episode had yet to air and instead I found myself using my time much more wisely: I was back on google trying to work out if a dairy-free buttercream icing was at all possible. To my delight and complete surprise, I found a way to adapt a recipe and create my very own coconut oil icing, which would tick all the boxes when it came to M’s dietary requirements. Whilst he is unable to eat coconut milk or flesh, he is able to tolerate the oil and I was over-the-moon to have the chance to finally bake a cake that actually looked and tasted like “real” cake for him to try for the first time in nearly a year. I took a tentative and small first mouthful to check the taste before spreading it across my cake. It has, unsurprisingly, a strong coconut taste, but this complimented the apple and pear flavours of the cake and was beautifully easy to use.

The icing was easy to make and I’ve no doubt I’ll be making more the next time a M-friendly cake is required. To make my recipe, I used:

  • 250g solid coconut oil
  • 200g icing sugar
  • 2tsp vanilla extract
  • 3tbsp rice milk
  1. Put the “solid” coconut oil – it should not be liquid at room temperature – into a bowl and blend until smooth 20150912_185526
  2. Slowly add the icing sugar and vanilla, continuing to beat the mixture 20150912_185815
  3. Finally add the rice milk, 1 tbsp at a time until you reach the consistency required. You can add more or less rice milk depending on how spreadable you want the icing to be 20150912_190502
  4. At this point I added some food colouring, one drop at a time, until I got the colour I was after – I’m not too sure about the green icing I ended up with, it was Mike’s suggestion and I’m not convinced it was the right one!
  5. Use to decorate cakes or cupcakes. Whatever your opinion of the colour, the finished result looked spectacular and I’m pleased to say it tasted amazing too!20150912_204048

A Wild 10th birthday!

This week I’m planning to take a break from any suggestion of a complicated bake – after 3 sets of birthday “cakes” last week and croissants the week before, I really think I deserve it. IMG_1731I have to confess to keeping it simple on the big day itself as M had huge ambitions for the day of his party and so a cake-stand full of rice krispie treats seemed to fit the bill. I did jazz them up a little by splitting the batch in two and adding chopped apple to one half and crystallised ginger to the other. The birthday boy seemed delighted with my choices and with that success firmly under my belt, I moved on to the next phase of my baking challenges for the week: the party cake!

M has been fascinated by the natural world for as long as I can remember, hence the arrival of Leo in our household just after Christmas. He loves watching wildlife programs on television, reading nature-themed books, be they novels or factual, and appears to absorb the facts he hears in a sponge-like fashion, ready to share at any given opportunity. So when Mike suggested a wildlife party for his birthday, M leapt at the chance and immediately asked if I could make a bearded dragon cake for it. I tentatively agreed, with my usual proviso that I couldn’t guarantee anything before the day itself and he would just have to accept it, no matter the end result. I researched and found a company who would bring a selection of reptiles and insects to our party location and would teach the children about each one as well as allowing them to touch and hold them if they wanted. It wasn’t my idea of a perfect birthday treat, but M was hugely enthusiastic and so I booked the party session, having somewhat madly decided to hold it at our house to make life a little easier.

For once I decided to learn from previous experiences and didn’t leave decorating the cake to the last moment as I usually do. The prospect of a 2am finish really didn’t appeal, especially if I was battling with creating the perfect bearded dragon cake topper and so planned to start a week earlier, with the hope of finishing at a much more reasonable time the night before. I found some images on-line and, with “Les Miserables” blaring in the background, carefully copied the individual body parts before attempting to put them together. Given Leo’s rather vivid orange skin tones, I chose to make a bright orange dragon and whilst it might not have been the most realistic coloured one, I was thrilled with my crafted copy. I carefully covered and stored it away from peeking eyes, determined that M would be left guessing until the last possible moment.

Fast forward a week and Saturday afternoon found me whipping up a batch of stone grey coconut oil icing to recreate a rock, having already baked a M-friendly pear and apple cake, which was now sitting on a bed of brown sugar “sand”. With icing, dragon and cake now all ready and waiting to be assembled, I turned to the matter of some un-birthday birthday cupcakes for G. As you may remember, for the second year in a row M was in hospital over G’s birthday and we were unable to celebrate the day with her. Last year we held a joint party for them both and had a lot of fun at their Cluedo-themed extravaganza, but I wanted to do something separate for G this year. Taking advantage of our tradition that each child has a friend at the other’s party, 12790894_10153315764351123_4961913402772457111_nwe decided to hold a small event on Sunday afternoon for G and invited her 2 friends to M’s party in the morning as well as 1 of his to hers in the afternoon. Given it was a very much belated birthday celebration, of course we needed more cake and I decided a batch of cupcakes would hit the mark and decorated them with some rather glamorous silver icing and snowflake patterns for my December baby.

The 8 boys and 3 girls spent their time racing around our back garden, bouncing on the trampoline and admiring the varied animals that arrived to entertain. M, of course, held all that he was allowed and G beat her fears to hold the tarantula, despite shaking hands and the occasional tear. The cakes were greatly received and M declared my bearded dragon the “best cake ever!

The Bionic Woman

For the last 6 days Mike has taken to calling me the “bionic woman”. Needless to say, I have not recently had a skydiving accident which has led to bionic modifications to my broken body resulting in amplified hearing, a right arm with the strength of 10 men and the ability to run at speeds over 60mph; in fact, there has been no incident of note and my 1 broken body part, my pancreas, remains well and truly broken. Rather there has been a conscious decision on my part to finally fully embrace a relatively new technological development that I hope will make a significant difference to my diabetes care.

I first became aware of this new bit of kit through M’s school friend, F and his fantastic parents, L and I. I can’t remember quite how we got onto the subject, but I’m reasonably certain that it had something to do with school Sports Day, the challenge of T1D vs. the active child and watching L check his blood sugars simply by waving a black box over his arm. To be fair, M had been wittering on telling me for quite some while about the “white, circular sensor-thingy” attached to F’s arm that enabled him to test his blood glucose levels (BGLs), but the lack of clarity in his description combined with my own lack of relevant knowledge meant that I had absolutely no idea what M was talking about and had dismissed the subject without really giving it a second thought. However, my interest was piqued through that chance encounter on the school field and it led to the opportunity for an enlightening conversation about what this thing was.

The Freestyle Libre (FSL) is marketed as a “flash glucose monitoring system” with a tagline of:

and I was intrigued enough by this to want to find out more and discover whether this might be for me, or not. I read their website, researched on-line for users’ reviews, joined the FB forum for FSL users and wondered if it was too good to be true. I’ll be honest, when I first looked into whether it would be a benefit to me and my T1D care, I loved how easy it appeared to be and, having spoken at length to L and I on more than 1 occasion, could see just how revolutionary it could be, especially for children with T1D.IMG_0131[1] But, and believe me when I say it was quite a big “but”, the sticking point sadly was the price. This type of technology is not available to anyone through the NHS as yet and funding the sensors alone would cost in the region of £100 a month. I know that you cannot put a price on good health, but as a Mum to 2 children with multiple food allergies and an already increased monthly bill due to the high costs of free from food, the challenge of finding that extra £100 each month (£125 extra earned pre-tax) felt quite daunting and I shelved any thoughts of such an investment for the time being.

However, even though the price was making me think twice, I was reluctant to dismiss the option out-of-hand and, given the lengthy UK waiting list, decided to add my name and wait to see what happened in the meantime. The daily events of life with M and G quickly overtook everything else and the FSL soon dropped far down my list of priorities, though it was never far from my thoughts. I’m not exaggerating when I say months passed, but at long last, in January 2016, I saw the message I’d been waiting for: the news that monitors and sensors were once again readily available in the UK and I decided to bite the bullet and order a starter pack to finally see if the FSL’s claims were all true.

IMG_0135[1]The concept is a simple one and reassuringly easy to use. You insert a small sensor with a thin, 5mm needle into the back of your arm and, although the initial instructions for applying it appear quite complex, it really was quick and easy to do. I didn’t find it painful at all and whilst it takes some time to get used to the constant presence of this sensor on my arm, I’ve had no problems with it. The sensor measures what is called the interstitial fluid glucose levels, which are not identical to BGLs as this is the fluid found between the cells, but are considered accurate enough for monitoring what is going on. To find out your BGL, you simply wave the scanner over your arm and it gives you the result almost instantaneously. IMG_0129[1]The sensor continually reads the changes in the glucose levels and, as long as you scan at least once every 8 hours, the easy-to-read graphs given on the screen indicate what has happened during the times you didn’t test. As with most CGM systems (Continuous Glucose Monitoring), it is recommended that the FSL user occasionally uses a standard glucose monitor to test their blood sugars and check that reading to the one given by the FSL – my tests have shown a difference of less than 0.3 mmol, which is incredible.

I can’t begin to tell you how impressed I am with this small device. It really was easy to understand how to use it and the whole family – Mike, G, M and even my Mum – have taken their turn in testing my BGLs for me. Everyday I sit with the scanner amongst the rest of my accountancy paraphernalia in front of me on my desk IMG_0128[1]and am able to discreetly test whenever I want or feel the need. The amount of information available is vast and you can look at enough graphs, bar charts and log books to satisfy even the biggest techno-geek. It has become strangely addictive to do and has already started to give me an even greater understanding of what my T1D is doing than I’ve ever had before. The non-invasive nature of the testing means that it would be easy for a parent to do during the night with no fear of disturbing their child’s sleep, and similarly for Mike to do if he ever feels that my blood sugars are dropping overnight – no need to wake me to ask me if I’m going hypo and then having to survive the often stroppy response his concerns are rewarded with, whether they are or not – yes I am precious about my sleep! I also have no doubt that it would appeal to every tech-savvy under-18 out there, which would no doubt reduce the chances of non-compliance and teen rebellion that so many young T1Ds experience,IMG_0130[1] thereby similarly reducing the risk of complications from poor control. I really can’t speak highly enough of my experience so far with the Freestyle Libre and wouldn’t hesitate to recommend it to every T1D out there. It has been a struggle to find a down-side other than the price, which is due to the £50 sensors needing to be replaced every 14 days. My personal solution to that is to fund 1 sensor a month for the time being, or at least until the point I finally win that elusive lottery jackpot!

Countdown to Cornwall

This time last year I had holiday-planned to within an inch of my life and had experienced amazing support from the folks at Virgin Atlantic. We had arrived at Disneyworld Florida, were impressed by the positive approach to M’s restricted diet shown by all and were loving our days in the sun. It really was a trip of a lifetime and we’ve all been reminiscing a lot about where we were and what we were doing this time last year.

Our plans this year have been much less grandiose and much closer to home. When we first started thinking about our summer holiday plans back in November, all we knew was that M was going to be going elemental sometime soon and would have a NG-tube in place. We didn’t know if it would still be there by the time this summer rolled around and had no idea what he’d be able to eat or how we’d all be coping with the change. We toyed with the idea of a holiday in Portugal, a favourite destination of us all, but just weren’t sure how confident we would be if we needed to travel abroad with a tube in place.  20150812_172857Of course, with the benefit of hindsight and nearly 9 months experience, I am sure we would have coped just fine, but the uncertainty of all we’d be dealing with meant that instead we opted for staying in the UK and so we are now on our countdown to Cornwall.

Our front hallway currently resembles a storage facility as I pull out ready for packing, not just clothes and beach essentials, but safe food supplies for both G and M and, of course, everything we’ll need for M’s tube feeds. We have each chosen a day-trip we’d like to do whilst we’re there as well as researching the beaches surrounding Fowey, our base for the week. Mike has spent time looking at various “wet-weather” options as there’s no guarantee of sun in the UK, even in August, and we have been able to pencil in a day with G’s godmother, Godmama C and her lovely family as they will be holidaying there too. We might be staying in a self-catering apartment, but we’re also hoping to venture out to eat and my time has been spent trawling the internet looking for allergy-friendly restaurants and emailing to find out whether they will be able to accommodate M’s current food needs. cornwall-mapThe great news is that a couple have already replied to tell me that they are up for the challenge and I can’t wait to try them out and share our reviews of just how well they did for both M and G with you all. Even better, thanks to timely posts from fellow bloggers such as The Intolerant Gourmand and dedicated websites like Can I eat there?, I’ve been given some great top tips for making this a holiday to remember.

 

Flatbreads and Fajitas

It’s been quite a while since I last had a new recipe to share, but this one has become a definite favourite at home and M asked me to share photos of his “most delicious meal ever!” on my blog.  Chichen_Itza_El_CastilloWe are still stuck at 3 safe ingredients plus oils for cooking at the moment and it’s becoming more and more difficult to make rice, chicken and cucumber even remotely interesting to eat at every meal-time.  The inspiration for this new recipe came from G and her current post-SATs topic about the Mayans.  They had been looking at food in current day Mexico and she came home raving about wanting to try fajitas:

Her enthusiasm was catching and, as G is so often reluctant to try new flavours and ingredients, I started to wonder whether I could jump on this Mayan bandwagon and transform our staples into a version of this popular dish.  My first challenge was to find a recipe that could provide the wraps needed and stumbled across this great one for rice flour flatbread.  Deciding to not run before I could walk, I started by trying my hand at making flatbread and seeing what response it got from my discerning duo.  The recipe was easy to follow and simple enough to accommodate M’s new food needs as it just requires rice flour, water, oil and salt.  Flatbread made, I nervously served them and watched the entire plateful disappear before my eyes – an instant hit.

With the flatbread puzzle solved, it was now time to construct some M-friendly chicken fajitas for dinner.  I finely sliced some strips of cucumber, pan-fried some chicken with lots of black pepper and thyme (he’s not yet allowed to trial chilli flakes or anything spicier than green herbs) and used some of the home-made chicken liver pate I’d perfected at the weekend to add a little something extra.  He wasn’t quite sure how to put them together, so we decided on a thin spread of pate on top of the flatbread, a sprinkling of cucumber and some small pieces of chicken, before rolling the lot into a shape vaguely reminiscent of a fajita.  G added some sliced carrot and mayonnaise to hers and they both quickly scoffed the lot.  This is the first “sandwich” M has been able to enjoy in a long time and I doubt it will be the last!

Home or away?

IMG_0746With a trip to London for M’s GOSH appointment an unavoidable part of the Easter holidays, we decided to make the best of it and spend a few days there on our very own mini city-break.  In preparation we spent one Sunday afternoon leafing through the pages of Mike’s “501 Days Out” book, looking for inspiration for what we could do during our stay and  G and M quickly filled a sheet of A4 with their suggestions.  It was left to Mike and me to make the final cut and hone our plans and, despite desperate requests for Legoland Windsor and Chessington World of Adventures, we decided to stick to those attractions within a reasonable distance of where we’d be staying and drew up a list that felt exhausting just looking at it.

where_to_stayThis epic event was our first overnight stay away from home since M had his tube back in December and I drew up thousandshundreds…well one very long list of everything I needed to do in preparation.  My first job, once our trains were booked, was to find somewhere to stay that would meet all of our requirements.  Usually we choose to stay in one of the Premier Inn hotels on the south-side of the Thames, be it near the London Eye or closer to Southwark Cathedral and find them a great base for walking, or using the underground, to almost anywhere we’re intending to visit.  Unfortunately, leaving the actual booking to a little late in the day meant that none of our usual suspects of hotels was available for the 3 nights we were planning to stay and instead I had to search for a suitable alternative.  Whilst browsing frantically looking for a room at the….an….any inn, I came across the option of a serviced apartment and things suddenly started to fall into place.

We chose a one-bed apartment in East Aldgate, not too far from the Tower of London and easy walking distance from the nearest tube station.  The benefits seemed huge:

  • with a separate bedroom and pull-out bed in the living area, G would be able to go to sleep at a reasonable time, whilst M played his usual night-owl games
  • there would be plenty of space to store all of M’s medical gear as well as the supply of safe foods for both him and G that we would take with us
  • having a kitchen meant we could easily prepare M’s feeds, make packed lunches and even cook dinner, thereby covering every possible meal-time option we might face
  • it also meant we would have a fridge to keep cooked meats, cheese for G and M’s feeds in overnight without the need to request one beforehand and then keeping our fingers crossed it would be available when we checked in
  • finally, we would have a quiet place to retreat to when things got too much or the children needed some down time in the middle of the day

So it was an easy decision to get that apartment booked.  The days flew past until finally I had no choice but to tackle the task of packing for our trip.  By the time I had everything I needed for M in the case, plus our supply of safe foods for both G and M, I was beginning to wonder whether I’d have room for any of the clothes the 4 of us would need for 4 days in London.  With some canny packing and careful choices about exactly what was necessary, I just about squeezed everything in and we were ready for our next big adventure.

Just one more dress-up challenge!

20150301_144602These past 2 weeks have been filled with one dress-up day after another for our household. Of course, it all started with the Cluedo party we held to celebrate G and M’s birthdays, where we invited guests to come in optional fancy-dress to match their character if they wanted.  The key word was “optional” as I was well aware that not all of M’s friends are as big a fan of fancy-dress as M is, but we were impressed with the range of costumes that arrived on that Sunday afternoon.  We had “Reverend Green” sporting a dog collar and a striking pair of bottle-green jeans; “Earl Grey” in pinstriped waistcoat, bowler hat and monocle and “Admiral Azure” had a home-made pair of epaulettes that would cause envy in the heart of any member of the armed forces.  Not to be outdone by the costumes of the boys, many of G’s friends joined in, wearing dresses to reflect the glamour of “Mrs Peacock”, “Mrs White” and “Lady Lilac”.  Dress-up challenge #1 – done.

20150305_083738Just a few days later came the first of our dress-up days at school, World Book Day.  Refusing to give in to M’s demands for a custom-made costume this year, I instead insisted he wore the army captain’s costume that we had bought for his representation as “Captain Emerald” at their birthday party and suggested he went as “Captain Nicholls” from Warhorse by Michael Morpugo.  We have recently enjoyed the stage production of Warhorse whilst it was on tour around the UK and M had bought himself the book for his admission to GOSH before Christmas, so he leapt at this chance, though in typical M style, he chose to be the lesser-known “Major Stewart” because he “got to ride Topthorn and not Joey, Mummy.”  G also wore a costume she had in her wardrobe and despite dicing with the idea of being “Dorothy” (Wizard of Oz) for the 3rd year in a row, ended up going as the “Princess” from Aladdin, wearing the Disney outfit from our Florida holiday last year.  Dress-up challenge #2 – tick.

20150306_154905The day after World Book Day, M had his Roman “Wow” day at school, requiring, naturally, a Roman costume.  He had originally toyed with the idea of going as a Celtic slave, but when the morning dawned, he had a change of heart and out came my trusty needle and thread, one of Mike’s white t-shirts, G’s plaited belt, M’s old white karate trousers and one of my red pashminas.  Less than 30 minutes later, our very own Roman-esque citizen made his way up to school – not bad for a quick Google search and 15 minutes of hurried sewing!  Dress-up challenge #3 – survived by the skin of our teeth!

 

20150311_210916I had a quick breather over the weekend, which was time enough to celebrate M’s 9th birthday itself and to gather the necessary base materials and trimmings for the next fancy dress requirement – a Greek toga each for the end-of-term Stagecoach performance.  Fortunately we were provided with a set of instructions on how to make a simple toga and G had acted as a model during Stagecoach a couple of weeks ago, so I had already had a sneak preview of how to put the costume together.  The togas themselves were simple enough to make, but then came the lengthy task of adding trim to suit the needs of my demanding duo and the trickier job of making the togas fit.  It might have taken a (very) late night, but the end result was fantastic and I can’t wait to see them perform on stage at the end of March wearing these masterpieces.  Dress-up challenge #4 – future success.

And so it’s on to just one more dress-up challenge as tomorrow is Comic Relief and the challenge to “Make your face funny for money”.  The costume is the easiest part of the day as they just need to wear their own clothes to school, but the challenge will come early tomorrow morning, when we need to be up at the crack of dawn to give me time to face paint them both.  G wants a tiger and lion on her cheeks, so we’re going to cheat slightly by using M’s tiger feeding friend stickers on one cheek.  I’ve promised her a lion’s face on the other side as long as she’s happy with a cartoon style decoration.  If we have time, I’ll also do her hair in a funky style and, fingers crossed, both will last her throughout the school day and tomorrow evening’s Stagecoach session.

M’s face will take a little more work, but I wanted to do something a little different to his tube for the day.  The plan is to cover his tube with both the tegaderm dressing and then a layer of safe micropore before I get to work with the face-paints.  We’ve agreed on a snake design, which will hopefully see me camouflaging his tube as the snake’s tail as it winds around the back of his head, with the snake’s head, complete with sticking-out tongue, appears on the opposite side.  Whether it will work or not, we will just have to wait and see, but I promise a photo if all goes well!  Dress-up challenge #5 – still to be decided.

Christmas decorations with a M twist

Whilst we are processing all that has happened in the last 3 weeks – think hospital admission (M), 11th birthday (G), 15th wedding anniversary (Mike and me), Carol services x 4 and metres of wrapping paper – I thought I’d share some quick snaps from a Christmas project that M undertook before he headed into GOSH.

20141126_204723[1]The challenge came from school – to create a unique Christmas tree decoration for a competition – and M knew exactly what he wanted to make.  A couple of weeks earlier, we had been watching a Christmas film (don’t ask me which one as I honestly have absolutely no idea, other than it starred Tori Spelling and was loosely based on the Dickens classic “A Christmas Carol”) and he had been fascinated to see the children threading popcorn into a garland to hang onto the tree.  He was adamant that this was what he wanted to make for the school competition, so Mike popped a saucepan of corn kernels and M and G sat down at the coffee table to start their threading.

20141126_204743[1]Bedtime arrived quickly and M asked if he could continue the job upstairs once he was ready for bed.  As M is rarely asleep much before 11pm on any given night, I swiftly agreed, knowing that this would be a great activity to keep him occupied and stop him bothering G too much, as well as a sneaky way to get 20141127_084222[1]another finger exercise to improve his fine motor skills into his day.   Whilst M was upstairs threading his garland, I was downstairs looking for simple instructions on how to make loom band candy canes to add an extra festive twist.

 

Six feet and six candy canes later, the garland looked amazing and M was proud to enter it into the competition.

(Oh, and that Christmas film we’d watched? – A Carol Christmas.  Well, I couldn’t leave you wondering!)

Who feels like chicken tonight?

Who remembers that advertising slogan from 20 years ago?  I couldn’t quite believe it when I googled to see just how long it’s been since the “Chicken tonight” adverts first started being played on TV – 20 years and that song is still reverberating around my head as if I’d heard it yesterday.  For those who never had the joy of seeing these the first time round, here’s a quick sample to show you what you missed:

The reason that jingle came to mind is that I decided to attempt a M-friendly version of that other classic, Chicken Kiev.  My reason?  G read something in one of her books where the main character was sitting down to a dinner of Chicken Kiev and she had to ask me what the dish was.  I realised that, as a result of the multiple allergies we deal with in our household, there are several meals I remember from my childhood that G and M have never had a chance to try.  Chicken in any form is a meal they will eat, so I thought it might just be one they could both enjoy and something new to add to their repertoire.

As always, I searched around for an easy recipe and then converted it for the family’s dietary needs.  I always keep any left-over bread crusts or pieces in a bag in the freezer as they are perfect for making into breadcrumbs.  20141003_201701I’ve also used frozen wraps, which work similarly well when making crumbs and add a slightly different texture.  Everything prepped, I coated the chicken breasts, popped them into the oven and kept my fingers crossed.

The finished dish looked delicious and both children commented on how wonderful dinner smelt as they washed their hands and came to the table.  I served it with rice and a mixture of steamed vegetables the first time and with mashed potato (or sweet potato) the second time at G’s request.  The chicken was beautifully succulent and the garlic butter oozed across the plates as the children cut into the Kievs.  Both plates were quickly emptied and G and M have asked me to prepare it again soon.
