- 110g rice flour
- 40g sugar
- 1tsp xanthum gum
- 1tsp baking powder
- 100ml water
- 60ml rapeseed oil
- 1 tbsp golden syrup
- Lightly grease a microwave-proof bowl with oil

- Mix the rice flour, sugar. xanthum gum and baking powder in the bowl

- Add the water and oil and stir well until you have a smooth batter

- Pour the golden syrup into the middle of the mixture

- Cover with microwave-safe clingfilm
- Cook the sponge on high power in the microwave for 4 minutes
- When it has cooked, turn out onto a plate to cool a little before serving

- Serve with safe cream, custard or ice cream
